Crispy Chicken Strips

Yummy, yummy, yummy! Easy for me and fills the need for my husband's fried chicken fix. Used a real egg (I don't buy the substitute) and a little more oil. Thank you for the great recipe!

Followed the recipe exactly but did add a can of tomatoes and cut the recipe in half because it is only my hubby and me. I also had to cut back on the cayenne and hot pepper sauce because my husband can't take spicy food. I did douse mine with a generous portion of hot sauce. This was very good. My only complaint was that the rice was a bit mushy, but that is probably my fault because I added the tomatoes. Good, cheap and filling.

Cranberry Nut Bread I

This is a wonderful recipe and it turned out very good. I was a bit worried about it being too dry with only 2 Tbs. of oil in it, so I added an additional 2 Tbs. of oil. I also needed to use up an apple that had been hanging around too long, so I grated the peeled apple into the batter as well. I didn't have fresh cranberries (and didn't want to run to the store), so I reconstituted 3/4 cup dried in a bit of water to sub for the fresh. Thank you again for the awesome recipe!

Mom's Simple Dumplings

Followed the recipe. Very good. Was able to reheat the dumplings by very carefully removing them from cold soup, heating soup to a slow simmer and dropping dumplings back on top for about 10 minutes.

Best Tuna Casserole

Tuscan Soup

Very good. I added some canneli beans to give it more substance. I also didn't want to open a whole can of evaporated milk to just use 1/4 cup, so I used half and half instead. Thickened it up with a bit of flour (I like a thick soup). Topped with fresh parmesan cheese. Yummy!!!

Grandmother's Buttermilk Cornbread

Very good and nice and moist. Didn't have buttermilk, so I substituted a mixture of milk and sour cream (with a tsp. of cider vinegar). Very good with lentil soup. Yummy!!!!

Chewy Chocolate Peanut Butter Chip Cookies

Followed the recipe, and as others said - they did spread out. I did make dough in advance and refridgerated for 3 days. I tried lowering the heat and cooking longer on the second batch, and that helped a bit. I ended up using a round cookie cutter to cut off spread out edges and 're-baking'. I brought these to my kids for Christmas, and I must say, they seemed to be very popular, and I received many compliments on them.

Broccoli Coleslaw

Excellent recipe! In defense of those that review but change the recipe - I only made minor changes because I didn't have some of the ingredients, and didn't want to drive to the store to get them. I used red onion instead of green (because I didn't have green), but followed the recipe other than that. I didn't mix it all together, but kept the broccoli mixture, ramen and seeds, and dressing separate and mixed at the last minute. My broccoli was from our garden, but was starting to flower, and this still tasted amazing. Thanks Jeri!!!!

BBQ Pork Salad with Summer Fruits and Honey Balsamic Vinaigrette

I followed the recipe exactly, even using the grapefruit (other reviewers omitted). It was very tasty, and the flavors - though diverse - went together very well. The dressing was a perfect compliment. Great way to use leftover pork chops. Great easy summer meal. Thank you!

Grandma Sophie's Smashed Potato Salad

Very basic, yet delicious recipe. You can stick to the recipe, but I can't seem to resist adding a little chopped onion and a small squirt of yellow mustard. Either way, this is a winner! Thank you!

Best Bread Machine Bread

Got a new bread machine for Christmas, and after two failed loaves (not this recipe), I decided to try this recipe. I have to admit, I was leary of mixing the yeast, water and sugar in the bottom of the loaf pan - this was contrary to the generic recipe instructions included with my machine. Followed the recipe exactly, and it turned out GREAT! It rose perfectly, crust and crumb were great as well. Thank you so much for this unorthodox but great recipe. I am looking forward to modifying it and using part whole wheat flour and honey instead of the sugar.

Mild Cheesy Chicken Enchiladas

Deceptively simple, and turned out very good and moist. I added a little green taco sauce to the filling and mixed some into the cheese sauce on top. Husband loved it. Thank you!

Ali's Amazing Bruschetta

I added some crushed garlic and about 1/2 teaspoon balsamic vinegar as per the suggestion of others. Brushed the french bread with a little EVOO, and broiled until golden. Put the cold Bruschetta on top. Husband loved it even though he is not a big fan of basil. Thanks for the recipe.

Delicious and very quick to make. I only subbed out the celery for some diced green pepper (no celery on hand). The sauce seemed a bit thin, so I added a bit more cornstarch to thicken. Other than that, it was a great recipe.

Valentino's Pizza Crust

Awesome recipe. I needed a crust that was fast, and this filled the bill. I followed the recipe, and as suggested pre-baked for about 8 minutes, then topped with sauce, and toppings. My son loved it. I will definitely use this recipe again. Thank you!

Chocolate Tea Bread

I was looking for something I could make with ingredients on hand. Followed the recipe to the 't'. The only thing I left out was the walnuts, son doesn't like them and none on hand. It turned out very quick to mix, and very moist. Looks like it is low fat as well. Nice recipe to have on hand with no eggs in the house. Thank you, Dorothy!

Salmon Croquettes

This was very good. Made a few changes only because I did not have some of the ingredients on hand - apologies to the Chef! Used cooked fresh salmon I had leftover instead of the canned. Did not have the wheat germ, so I crushed up some Ritz crackers instead. Other than that, followed the recipe to the 't'. I served it with the Creamy Dill Dipping Sauce also on this site. Elegant and easy, thank you!
