Fettuccine with Bacon-Clam Sauce

Reviewed: Mar. 20, 2008
Made with triple the amount of bacon, because there is never, ever, enough bacon, half and half rather than heavy cream (cause I don't know about y'all, but I don't need those extra calories), and no parsley as I couldn't find it on my first pass through Food 4 Less and I was too lazy to go find it again. Honestly, the texture of the sauce did not appeal to me, and all I could smell was CLAM JUICE! Which, being from Pismo Beach, you'd think would be appetizing, but not so much. The lucky guy I cooked it for thought it was delicious and finished my bowl, which is why it's getting 4 stars from me. Has potential. The fresh grated parm is necessary.

Garlic Sauteed Artichokes

Reviewed: Aug. 21, 2007
This recipe produced some of the most delicious artichokes I have ever had. I ended up passing on steaming it in just water, and used a combo of white wine and water. For dipping sauce I cracked some cloves and let them sit in some butter while it melted. Super garlicky, just the way we love it! Will definetly make again.

Clam Sauce with Linguine

Reviewed: Feb. 16, 2007
I enjoyed this recipe, and I feel any fault of it was my own. I used too much pasta and ended up with not enough sauce. Everything else was great. Simple, not fancy company worth, but good. Will make again, but with more sauce!

Salmon with Mango and Brie

Reviewed: Feb. 12, 2007
This recipe is fantastic! The only problem that I ran into is that the brie melted almost completely off the salmon, but I just layered more brie on before ladling the mago sauce on. For the mango topping, the mangos I started with were a bit unripe, so I took another reviewers advice and blended them in the blender first. I think this greatly facillitated with making it smooth, for the unblended chunks never got smooth on their own. I also added some lemon juice, some brown sugar, and a pinch of cayenne pepper. It was great over the rice I served on the side. Be prepared to make extras, but don't expect any leftovers, everything was scraped clean! This is one of my favourite recipes and the only reason it isn't getting 5 stars is because of how much I changed it. Have fun with it!

Simple Ranchy Breaded Fish Fillets

Reviewed: Feb. 4, 2007
Salt and pepper before breading is definetly necessary, but otherwise this is a decent recipe. The ease of prep and the fact you can get it to the table in about 15 minutes is great. Plus, you can get everything you need for under $10 (at least where I'm at). What more could you ask for?

Pan Fried Halibut Steak with Light Green Sauce

Reviewed: Feb. 4, 2007
The store was out of halibut, so I used the mild talipa instead and I think it worked great with the reduction sauce. I wouldn't suggest using salmon. My only other suggestion would be to try not to dawdle in making the sauce, and plate as quickly as possibe. Served with creamed spinach and parsley as decoration, and it looked great. Will definetly make again, maybe with halibut next time.

I'm giving this a four merely becuase my boyfriend really liked it, which is amazing since he is the King of Picky. I didn't much care for it, but I will probably make it again for him.

Creamy Artichoke Pasta

Reviewed: Apr. 16, 2006
I made this recipe one night when I was absolutely famished but didn't want to give in to fast food. By chopping the artichokes as they warmed, completely forgetting about the onion, and just generally hauling butt, I got this on the table in under 20 minutes. Slightly more than getting fast food, but a heck of a lot better tasting and better for you. I used hearts in hot marinade, and I will probably do it again. I highly recommend this recipe for everyone, vegetarians and meat eaters (like me) alike, for its delightful mix of flavours, ease of preperation, and the many possible variations. Stop reading reviews and make it already!

Laura's Unbelievable Chicken and Pasta

This will be one of those recipes you love to make. So easy, fast, minimal clean up, and completely fool proof, which makes it perfect for those nights when you come home from work and don't want to think. Also, most of the ingredients you'll have on hand, which is always handy. *teehee*

Italian Roast Beef I

Reviewed: Apr. 15, 2006
This was so good! The ease in which it was made didn't seem to equate with how freakin' good it was. We made sandwiches with pepper jack cheese and some salsa, and it truly made the meal. Just make sure to slice it thin!

Instant Strawberry Ice Cream

This is absolutely amazing! I had to make it twice in one weekend at the behest of my boyfriend and our friend. This is also very delicious just out of the blender, poured over angel or pound cake. Just make it!
