Mexican Rice II

Wow I finally made mexican rice! I 'browned and fluffed' it on the stove, then put it along with the liquid into a rice cooker. The texture was like real mexican rice! Something I've never been able to do!! I don't think I added enough salt but I'm a salt-a-holic - that's what I get for eyeballing the spices! I also cooked the onion in the oil before adding the rice and used fresh garlic. SO HAPPY TO HAVE FOUND THIS RECIPE!! Thank you!!!!!

Chicken Breasts Pierre

YUM! I was a little leery on this because it kind of seemed like I was throwing the whole pantry in the dish but hey I didn't have to go to the store so I was happy! I made the sauce a few hours ahead of time and let it all marinate together in the fridge - I made it a little sweeter and a little spicier than the recipe, and also added Grey Poupon and it turned out fabulous! Sweet, spicy, tangy and full of flavor! We served it with whole grain pasta and creamed spinach and both went back for seconds! My hubby said 3 times how much he liked it! Definitely a keeper! Butter Icing for Cookies

Tastes delicious, dries nice. Use a sandwich baggie, cut off the very tip so that it makes a small hole, and you can decorate like a pro! Mix colors in the plastic baggies by dropping a small amount of food coloring (or flavoring) into the bag, squeeze gently until all mixed. Yum!!

Fried Spinach

This was pretty good - the egg was a bit much though, next time I'll omit it. I didn't add the bacon, but did add garlic and some shredded parmesan. Nice side dish.
