Glazed Almond Bundt Cake

I made this yesterday and took it into work today. It was completely gone by 2:00 and two people demanded the recipe. I used confectioners sugar in the glaze as granulated would be grainy (unless maybe it would be cooked to dissolve it). The glaze was very runny though, next time I'll probably start with 1-2 Tbsp milk and then add more if needed. That would probably make the almonds stick better to the cake, as is they just run down the sides with the glaze. I might try this with pecans or walnuts too. Yum!

Cooked Mayonnaise

If this ends up oily you did not mix it enough or added the oil too fast. This is a great recipe because it really is very thick, like whipped cream. I added more black pepper and a dash of white pepper for a little kick.

Gingerbread Waffles

These are great with real maple syrup but if you're going to eat them plain you may want to add a little sweetener. I used Ener-G egg replacer and non hydrogenated margerine instead of butter to make them vegan.

Dad's Orange Cardamom Breakfast Rolls

I made these for my mom for Christmas and she and my dad loved them. I tasted one for quality assurance purposes and it was pretty good even though I don't really like cranberries. If I made them for myself I'd use another dried fruit instead.

Maple Fudge

I followed the advice of a previous poster and added 1 cup granulated sugar and it was delicious! I made some for Christmas goodie bags and brought the leftovers for Christmas dinner and everyone went crazy over it. Interestingly, I came upon a candymaking book from the 1950's or 60's which has this original recipe without the granulated sugar. That makes me want to try it withoug the sugar but based on the reviews I think I'd just be wasting 2 cups of nice Grade B syrup. When I find the book again I'll compare the directions and see if that's where the problem is.

Maple Twists

I took these to a Thanksgiving breakfast and they were devoured, I will have to make them again so I can have more than one. I did everything but bake them the night before and they were still great, I was afraid they wouldn't do well sitting in the refrigerator all night but they were wonderful. Use real maple syrup, I doubt the faux-maple flavored syrups would be good.

Brenda's Apple and Pomegranate Crisp

I scaled this down to 2 servings and used a 7 x 5" pan. That made 1/8 of a pomegranate so I just used about 1/2 c seeds. It's very good but the pomegranate taste wasn't very noticeable although that could be due to my scaling down, not the original recipe. I will use more pomegranate seeds next time and maybe even some pomegranate syrup.

Trail Bars

I vegan-ized and reduced the fat in these. I used 1/2 C 'Buttery Sticks' and 1/2 C applesauce, and replaced the honey with maple syrup (I'm going to try agave nectar next time). I omitted the chocolate chips and used a little more dried fruit. I replaced the 2 eggs with 2 Tb. flax meal + 6 Tb. water. The bottom was very dense but that is probably due to my alterations. I will definitely be making these often!

Peanut Butter Ice Cream

This was my first time making ice cream. I scaled it down to 4 servings because my ice cream maker is small (it could have held 6 servings but I was playing it safe) and it turned out great. Everyone who ate it loved it.

Corn Chili

I liked this but it was a little too much cayenne for my taste. It made it hot but it tasted like something was missing. I added about 1 Tb chili powder and that helped out. I am vegetarian so I used powdered veggie base and used fresh chopped oregano (about 1 Tb) because I had some on hand and didn't want it to go to waste. I will definitely make this again.

Honey Mustard Tofu

This was good even though the tofu didn't turn out crispy for me. Next time I'll try the sauce separately or use larger 'steaks' instead of cubes like others recommended. I let it cool to lukewarm and put it over a simple salad and it was tasty.

I really like these. Not bland but not excessively sweet. I didn't have enough honey so I used maple syrup for almost half the 1/4 cup and they turned out fine. I also had a left over partial bag of dried fruit along with the 7 oz bag called for that I tossed in anyway to use it up.

Sugar Cookie Frosting

Apricot Maple Glazed Pork Chops

Many pork chop recipes I've tried end up with dry chops but not this one. They weren't dry and I loved the taste, especially with the dried apricots (I added the whole bag!).
