Mexican Casserole

I have made this at least a dozen times now, in fact I've got some in the oven at this very moment! It's my favourite thing to make when I have no idea what to make, as I usually have the ingredients on-hand. I use reconstituted dehydrated refried beans from my food storage, and usually add some ground beef to give it a little more oomph. Fresh cilantro is a nice touch if you happen to have it around. Everybody says "yay!" when I serve it, and that's saying a lot with 3 little kids and a picky husband!

Slow Cooker Pineapple Pork Roast

Followed the recipe to the letter, it was good. The roast was extremely tender and tasty, actually it was too soft to carve into slices so we ate it sort of "shredded". The resulting gravy and pineapple topping was a bit too sweet; next time I make this (and I will) I will temper the sweetness with some onion and garlic.

Savory Pork Stew

I usually have bad luck with pork, it comes out tough for me. This recipe is really tender though, and has a nice creamy gravy.

Easy Granola Bars

Yet another rave review...Rave! Rave! Rave! I have never been able to eat granola bars before due to nut allergy, but now I make my own so easily! The pickiest husband in the world gives them two thumbs up and takes one for breakfast every morning. Use parchment paper (not wax paper) and they don't stick at all.

Grilled Brown Sugar Pork Chops

I used the sauce to marinate pork cubes, then skewered them with fresh pineapple chunks and basted all with more sauce while grilling. The yummiest thing my BBQ has ever produced.

BBQ Meatballs

People like my husband who don't mind pre-prepared food (which tends to be saltier) will love this recipe, since the ingredients really are all pre-processed. I usually prefer a more home-made flavour, but the easiness of the recipe more than made up for the store bought nature of it. I made it for the last family gathering at my house, everyone agreed it was tasty. Next time I will try the same technique with chicken wings instead of meatballs.

Rhubarb Slush

If you want to keep more rhubarb flavour, save the cooking water from step 1 to use as the ingredient water in step 2. Even with half the sugar it's plenty sweet, next time I will use Soda Water instead of lemon-lime pop. A great recipe- and fun to experiment with!

Brazilian Whole Banana Pie

Nutritious and delicious! I did have trouble with the melted sugar layer on the bottom, it wouldn't turn into syrup for me so in the end I just sprinkled brown sugar in the bottom of the baking dish which seemed to work just fine. I also wondered exactly what "light margarine" is, I used regular stick margarine and it was great. Works perfectly well with whole grain flours besides wheat (I used barley). Everyone loved it, and were sorry they were too full to eat more! (10 inch spring form pan fits it all well.)
