Hot Cross Buns I

I didn't use my bread machine as I wanted to double the recipe. Definitely should have added the cinnamon & raisins with the other ingredients! I'll make this recipe again but will spice it up a bit by adding orange zest or substituting Sun Maid Tropical Fruit for the raisins. I also like the idea of piping the cross on the buns as my pastry brush did not work well.

Grandma's Pork Chops in Mushroom Gravy

I made this using boneless pork loin chops so definitely recommend reducing the total cooking time to 20 - 25 minutes. Fresh mushrooms are a must!

Fruit Dip II

Strawberry Cheese Pie

I served this pie for Father's Day and it was a huge hit. I substituted with homemade graham cracker crust, Cool Whip, & seedless strawberry jam. Omitted the chopped almonds, too.

Grilled Salmon I

My 4-year old begs me to make this! I followed the advice of another reviewer and usually bake this in a 450 degree oven for 12 minutes and broil for 5 minutes. I also transfer the marinade to a saucepan to make a yummy gravy by adding 1 T. of corn starch and bringing to a boil. Serve with rice for an absolutely super meal!

Molasses Crinkles

I made these several times during the holidays and didn't change a thing, although I did press about half to two thirds of the recipe into a parchment paper-lined Wilton gingerbread boy pan in a lame attempt to duplicate Gingy from Shrek :-) Needless to say, the kids gobbled him up!

Italian Bread Baked on a Pizza Stone

This bread reminded me of the bread at Macaroni Grill. I made 2 small round loaves and 2 calzones. Note: I didn't proof my yeast which had an expiration date of 09/08 and was stored in the fridge since December. I had to leave the dough in the bread machine for an additional 30-45 minutes after the end of the dough cycle as it hadn't risen enough. Once I gave it more time it was fine. Thanks Destiny!

Chocolate Chip Cake

Down Home Macaroni and Cheese

This was very creamy and my family seemed to like it. No ooohs and ahhhs. I thought it was just a bit bland despite the tweaks I read in another review, garlic salt, cayenne pepper, mustard powder... The next time I make mac & cheese from scratch I will look for a recipe without velveeta.

Layered Chicken and Black Bean Enchilada Casserole

I made this for friends and everyone loved it! I skipped the saute step and just poached boneless, skinless chicken breasts w/ Rotel, chicken bouillon, sliced onions, salt & pepper. As soon as they were cool, I chopped them up and added them to the black bean mixture. Having plenty of chicken in this dish is key to its success. Take an immersion blender to the bouillon mixture and add enough water to make a fabulous, spicy rice side dish.

Chicken Spaghetti Casserole I

I never made chicken spaghetti before so I researched a lot of recipes on this site and elsewhere. This recipe is the one I kept coming back to...BUT here's how I ended up making Chicken Spaghetti: Boil 2 split breasts with water, carrots, onions, celery, garlic, bay leaf, salt & pepper. Remove the breasts, strain & de-fat the broth. Ladle about a cup of broth into a bowl; set aside. Pour the rest of the broth back into pot & set aside. Skin and debone the breasts when they're cool enough to handle. Chop the meat into bite size pieces; set aside. Bring the broth (and more water if needed) to a boil & cook the pasta per pkg. directions. Return drained, rinsed pasta to pot; set aside. Saute 1 c. each chopped onions and bell peppers in 1 - 2 T. butter till soft. Add 1 can cream of mushroom soup, 1 can mild Rotel tomatoes, 2 c. shredded Cheddar & Monterey Jack cheese, season to taste with garlic powder, salt, & pepper. If consistancy is too thick add some of the reserved broth. Stir in the chopped chicken. Pour mixture over pasta and stir till well blended. Transfer all to a casserole dish, bake in preheated 350 degree oven 10 to 15 minutes, sprinkle with shredded cheese, and continue baking 15 more minutes or till bubbly. Note: 1 spilt breast yields about 1-1/2 c. of chopped meat.

Chocolate Chocolate Chip Cookies II

Awesome cookies! A great basic recipe for whatever you're in the mood for: nuts, white or milk chocolate chips, Reese's chips, etc... I doubled the recipe and didn't have a lb. of butter so used 1 c. butter & 1 c. Crisco.

Chicken with Chipotle

I won't make this again. The sauce was bland w/ only 2 peppers so I used 4 - fine for my fire-breathing husband, but too spicy for the rest of the family. The kids tore the skin off and removed the meat to roll up in flour tortillas (messy!) Sorry, but there are too many good chicken recipes out there to bother w/ this one.

Caramel Apple Pork Chops

So, so... If you make this follow the advice of another reviewer and skip the oven. Season the chops w/ salt & pepper and brown in skillet. Double the ingredients of the apple glaze and use a saucepan. When the consistancy is right transfer the glaze to the skillet and coat the chops. Cover and simmer till meat is tender, 15-20 mins.
