Hot Pizza Dip by 3-A-Day™of Dairy

I thought this dip was very good but not 5 star. I recommend using a smaller dish. Use a 9" pie plate or quiche dish if you're doubling the recipe.

Slow Cooker Chicken Taco Soup

Yikes! 4.5 stars and 927 reviews. Need I say more? Well, yes, actually... I made this recipe exactly as written. I even followed Patti's recipe for the taco seasoning. It tastes very beery! Adding a dollop of sour cream, a sprinkling of cheese and crushed up tortilla chips certainly makes this a decent bowl of soup, but I'm gonna sub chicken broth for the beer if I make this again.

Quick and Easy Mexican Chicken

Super easy and very tasty! I only had hot salsa on hand so I blenderized it with canned diced tomatoes. The sauce still had some kick but the kids could also enjoy it. Try this with some spiced up rice and a salad for a dinner that's muy delicioso!

Beef Stroganoff III

Absolutely delicious beef stroganoff! I used top sirloin roast and marinated it overnight in red wine. If you use a non-stick skillet you can get by with half the butter. After the meat browned, I spooned out most of the excess liquid and had no problem moving the meat aside to cook the onions (hint: chopped white or yellow are less work.) I like extra sauce so I added 1 - 2 c. more broth (made from beef base) than the recipe calls for. Also sauted fresh mushrooms in a little butter and garlic to add at the end...mmmmm!

Roasted Vegetable Lasagna

Cheesy Ranch Potato Bake

I halved this recipe for my family of five (no leftovers.) Two large potatoes worked fine in a 9x11 pyrex dish. I used seasoned salt instead of plain, cut the butter down to 2 T., and added crumbled bacon with the Ranch & cheese.

Strawberry Spinach Salad I

I'd really like to give this recipe 5 stars but it's just not spectacular as written. The only change I made was reducing the sugar to 1/4 c. Wished I had followed other reviewer's advice and subbed balsamic vinegar... If I do use this recipe again I will also try toasting the almonds.

Caramel Apple Pork Chops

So, so... If you make this follow the advice of another reviewer and skip the oven. Season the chops w/ salt & pepper and brown in skillet. Double the ingredients of the apple glaze and use a saucepan. When the consistancy is right transfer the glaze to the skillet and coat the chops. Cover and simmer till meat is tender, 15-20 mins.

Chicken with Chipotle

I won't make this again. The sauce was bland w/ only 2 peppers so I used 4 - fine for my fire-breathing husband, but too spicy for the rest of the family. The kids tore the skin off and removed the meat to roll up in flour tortillas (messy!) Sorry, but there are too many good chicken recipes out there to bother w/ this one.

Chocolate Chocolate Chip Cookies II

Awesome cookies! A great basic recipe for whatever you're in the mood for: nuts, white or milk chocolate chips, Reese's chips, etc... I doubled the recipe and didn't have a lb. of butter so used 1 c. butter & 1 c. Crisco.

Chicken Spaghetti Casserole I

I never made chicken spaghetti before so I researched a lot of recipes on this site and elsewhere. This recipe is the one I kept coming back to...BUT here's how I ended up making Chicken Spaghetti: Boil 2 split breasts with water, carrots, onions, celery, garlic, bay leaf, salt & pepper. Remove the breasts, strain & de-fat the broth. Ladle about a cup of broth into a bowl; set aside. Pour the rest of the broth back into pot & set aside. Skin and debone the breasts when they're cool enough to handle. Chop the meat into bite size pieces; set aside. Bring the broth (and more water if needed) to a boil & cook the pasta per pkg. directions. Return drained, rinsed pasta to pot; set aside. Saute 1 c. each chopped onions and bell peppers in 1 - 2 T. butter till soft. Add 1 can cream of mushroom soup, 1 can mild Rotel tomatoes, 2 c. shredded Cheddar & Monterey Jack cheese, season to taste with garlic powder, salt, & pepper. If consistancy is too thick add some of the reserved broth. Stir in the chopped chicken. Pour mixture over pasta and stir till well blended. Transfer all to a casserole dish, bake in preheated 350 degree oven 10 to 15 minutes, sprinkle with shredded cheese, and continue baking 15 more minutes or till bubbly. Note: 1 spilt breast yields about 1-1/2 c. of chopped meat.

Layered Chicken and Black Bean Enchilada Casserole

I made this for friends and everyone loved it! I skipped the saute step and just poached boneless, skinless chicken breasts w/ Rotel, chicken bouillon, sliced onions, salt & pepper. As soon as they were cool, I chopped them up and added them to the black bean mixture. Having plenty of chicken in this dish is key to its success. Take an immersion blender to the bouillon mixture and add enough water to make a fabulous, spicy rice side dish.

Down Home Macaroni and Cheese

This was very creamy and my family seemed to like it. No ooohs and ahhhs. I thought it was just a bit bland despite the tweaks I read in another review, garlic salt, cayenne pepper, mustard powder... The next time I make mac & cheese from scratch I will look for a recipe without velveeta.
