Pineapple Pork Chops

My family and I thought this was a bit bland. I'll make it again but will season the chops with garlic, salt, pepper, and maybe ginger and perhaps saute them in butter. Five minutes per side didn't give my chops a very appealing color, so I'll probably saute them till they're golden brown. As another reveiwer stated, this will ensure more tender chops.

Spicy Garlic Lime Chicken

I adore this recipe! You can almost completely eliminate the butter and olive oil. I put about a teaspoon of olive oil in a spritzer and spray a non-stick skillet, however any cooking spray would work. I've subbed fresh garlic for the powder but either way, this chicken rocks!

Scallops and Spinach over Pasta

This was okay. Although I really try to follow the original recipe as often as possible, I really couldn't resist some of the top reviewer's suggestions. So, I put a package of fresh baby spinach in the pasta water during the last minute of cooking; sauted fresh garlic w/ sliced mushrooms in 1 T. olive oil, adding the scallops when the mushrooms looked just about ready; used 1/4 c. chicken broth w/ 1-1/2 t. corn starch whisked in; tossed the drained pasta & spinach together w/ the scallops and served with salt, cracked pepper, & freshly grated parmigiano-reggiano cheese. Still needs some tweaking...

Pretty darn good cornbread, however I did deviate from the recipe and used 1/2 c. sugar, 2 t. baking powder, plus a little extra canola oil.

Barbecued Beef Brisket

This made me wonder why people spend so much time smoking and/or grilling briskets! The only change I made was using 2 fresh garlic cloves, pressed and rubbed over the meat, instead of garlic powder which I was out of. We had this with Golden Sweet Cornbread (also from this site) and tossed salad.

Crispy Potato Wedges

I strongly recommend using medium-size baking potatoes and spicing up the seasoning with a little red pepper. We loved these with battered pan fried shrimp!

Annie's Fruit Salsa and Cinnamon Chips

This gets 3 stars for the fruit salsa. The chips get -2! They weren't crispy after baking for 10 minutes so I turned & baked them another 5 minutes. After cooling, I thought they were reasonably crispy so went ahead and took them to a neighbor's 4th of July party - no one touched them! I recommend making the salsa and buying the chips.

Crunchy, spicy, tangy goodness! May add some serrano pepper to the salsa for a little more kick, but then, I may not, this recipe is great as is!

Taco Bake II

This was very good - totally satisfied my craving for Mexican food. Mine turned out like glorified nachos, however. I made about a quarter recipe, using approx. 4 oz of meat, and also used restaurant-style tortilla chips. Guacamole on the side is a must!

Easy Slow Cooker French Dip

Super, super good! I used a little under 3 lbs. top sirloin, 2 cans French Onion soup, 8 oz. beef broth, 1 clove garlic, and a couple splashes Worcestershire sauce. This will be made again, and again, and again....

This was very good. My only complaint was the extra egg & bread crumb mixtures that I had remaining. When I make this again, I will try 2 eggs and the equivalent amount of milk, and 1 cup bread crumbs...

Chicken with Asparagus and Roasted Red Peppers

Ten minutes was too long for my asparagus! I prefer it tender-crisp so next time I'll only cook it about 5 minutes and then add the tomatoes. Maybe go a little longer on the first step to compensate. This also could have used a pinch of red pepper flakes.

Panzanella Salad

I've made this twice in the past week and IT IS PHENOMENAL! For the latest batch, I cut up ciabatta bread yesterday afternoon and let it sit on the counter till lunchtime today. It got good and stale. Definitely go with more garlic. I toasted the bread for 10 minutes. When it was time to eat, I put some fresh, crisp spinach in my salad bowl and topped it with the panzanella & a turn or two of cracked pepper....mmmmmm....Thank you, thank you to Pixie2 for "pushing" this recipe!
