I'm back in New Orleans now and loving the access to seafood! I think the stint in Uganda tested my cooking creativity (with a lack of ingredients was used to having on hand) and now I'm in cook heaven. I'm also very lucky to work in a place that has an amazing teaching kitchen and a program where celebrity chefs come in to do demonstations. I'm learning tons!
My favorite things to cook
Soups and stews are at the top of the list as the variations are endless and the only limitation is your imagination (and what's in the fridge...) I enjoy baking but it definitely is not my strong suit.
My favorite family cooking traditions
I am a child of the fifties so my family's cooking traditions centered around cans. Could be why I am such a fresh food fanatic now!
My cooking tragedies
I lived in a communal home in the eighties with some amazing bakers. I watched them toss bread together with supernatural powers. I tried it once and made a loaf of bread so hard, so dense, so totally inedible that I buried it in the garden...

Puff Pastry Salmon
I combined this with another recipe and the results were wonderful! I sautéed asparagus pieces (instead of spinach) in butter with a little onion. Made a hollandaise sauce from a mix (instead of pesto) and then layered asparagus on one sheet of puff pastry, the salmon fillets, more asparagus, then topped with the hollandaise sauce and the second sheet of puff pastry. It took quite a while to bake and I finally put it under the broiler for a minute to brown the top but the results were beautiful and delicious!

Kale and Quinoa Salad
Looking for something to make with fresh kale, I saw this recipe and said "I have most of that stuff." However once I got started, I realized I had no pecans, no currents, and no feta cheese. I hate it when that happens! But necessity is the mother of invention and sometimes magic happens. I prepared the quinoa, dressing and kale as directed then used avocado, fresh strawberries and grated Swiss cheese as the replacements. It was amazing!

Chocolate Chip Shortbread Cookie Logs
I had to make a few changes based on what I had in the house. So I'm giving the recipe a five because I think if I could have followed it strictly, it definitely would've been a five-star cookie. With just one cup of chocolate chips handy, I decided to substitute a quarter cup of the flour for a quarter cup of baking cocoa and save the chips for melting and dipping the cookies after they were baked. I also didn't have walnuts so I chopped up a cup of almonds very fine. In spite of these alterations, the cookies are light, buttery and delicious!
