Herbed Pork Chops in Mushroom Sauce

An easy and flavorful recipe for pork chops! I followed the suggestions made by ren1216, which definitely boosted the flavor. I did deglaze with white wine after sauteeing the onions, with excellent results. The Worcestershire splashes into the gravy before simmering enhanced the dish. I served the chops with mashed potatoes, and ladled the creamy golden gravy over all. I will definitely make this dish again--it is a great electric skillet recipe for my husband and myself.

Chocolate Fudge Buttercream Frosting

A delicious, fluffy chocolate frosting recipe to add to your collection! I only made two adjustments: added an additional ½ cup of powdered sugar, and subsituted two tablespoons half and half for the two tablespoons of milk. This recipe makes enough frosting to frost a 2-layer, 9-inch round cake...including the filling between the layers. It was easy to make, and it is almost chocolate mousse-like in consistency. I used it to frost a marble cake. Yum!

Whipped Cream Cream Cheese Frosting

Delicious and unique, this frosting has a lightness about it that is most-pleasing! I used it to frost and fill 3 layers of Strawberry Cake from Scratch, found on this site. Three things to point out: be sure to thoroughly chill (in freezer) the bowl and whip you will use to beat the cream; the cream cheese should be at room temperature before beating; I used powdered sugar. I will definitely make this frosting again, and I think it would be wonderful on several different kinds of cakes.

Strawberry Cake from Scratch

I made this cake for my daughter's 25th birthday. Not only did everyone say "This cake is really good", but second and third helpings were sliced! This cake is unique, delectable, and pretty. I frosted it with Whipped Cream Cream Cheese Frosting, found on this site. I folded the remaining strawberry purée into approzimately one cup of the frosting, and used that as filling between the cake layers. Aftr reading many of the reviews for the cake, I compiled advice and prepared it with these revisions: 1. make 3 layers, and line pan bottoms with parchment paper; 2. use unsalted butter & add 1/8 teaspoon salt to batter; 3. separate eggs, and beat egg whites until stiff peaks form--fold in as last batter ingredient; 4. measure cake flour after sifting; 5. use 2 teaspoons vanilla. The layers did not rise much, and the cake was of a more dense nature...but it was so moist and tender and tasty!

Lemon-Raspberry Muffins

Lovely light, moist and scrumptious muffin that is so very easy to prepare! I followed the recipe exactly, using raspberries I had purchased fresh, and then frozen myself. A slow and light hand when folding in the berries with a rubber spatula will give you a nice result.

Grandmother's Buttermilk Cornbread

Absolutely delicious! I prepared the cornbread exactly as stated in the recipe. Very easy, nice and moist, and it is a wonderful accompaniment to a barbeque-flavored main dish. This is now my favorite recipe for cornbread.

Daria's Slow Cooker Beef Stroganoff

Easy and delicious, I highly recommend this recipe for Stroganoff. I followed the recipe exactly, with the exception of using red wine, adding one more garlic clove, and mixing together the ingredients in step one before pouring them over the beef and onions in the pot. Served over noodles, this dish was full of wonderful flavor. Enjoy!

Hummus III

This recipe is easy and absolutely delicious--you will flip! After reading several reviews, here is what went into the food processor: measure out the 2 cups of beans AFTER draining the cans; 3-4 tablespoons of tahini sauce (it came in a tall jar and poured), ¼ cup freshly-squeezed lemon juice, 3 freshly-minced garlic cloves, 1 tablespoon olive oil, 2 tablespoons plain yogurt, ¼-½ teaspoon EACH-->ground cumin, sea salt, paprika, and a pinch of cayenne pepper. Reviews from my two daughters--one an experienced hummus-maker, and the other a hummus-lover--were enthusiastic and glowing. For optimum flavor, be sure to make this the day before you plan to eat it. Thank you to Rhoda for a marvelous recipe to work with!

Beef-Stuffed Squash

Absolutely delicious dish! It was easy to prepare with ingredients I had on hand. I took the advice of other reviewers, and added 5+ minutes cooking time to the squash alone. I then cooked the stuffed squash for the full 50 minutes. Result: perfectly done, highly flavored, filling and satisfying. This recipe is a winner--one I will definitely make again and again. I am most grateful.

Mushroom Rice

Absolutely delicious! This rice dish is easy to prepare, oh-so-fragrant, and an excellent accompaniment to a wide variety of foods. It is also easy to change the ingredient amounts according to the number of servings you need. My husband likes mushroom flavor, but not biting into big mushroom pieces. I used a Zyliss food chopper (using a knife to chop works fine, too) to turn the mushrooms into tiny bits before cooking. This is my favorite rice dish, for everyday suppers and for entertaining guests. Try it!

Key Lime Pie VII

Flavorful, tart, creamy, and easy! I made my own graham cracker crust for optimum flavor, using the food processor. I did not have a bottle of key lime juice or the wee limes themselves, but I did have 4 large Peruvian limes. The flavor and zip they provided was excellent. I served pie wedges to my guests on glass plates that had first been sprinkled with powdered sugar. A dollop of whipped cream and a twisted, thin slice of lime were placed on top of each wedge. 3-4 plump, fresh raspberries were added to each plate. Fun, easy, impressive, and delicious--you have to try this recipe.

Ultimate Twice Baked Potatoes

Wonderful flavor, easy to make, and everyone loved them! I did not change any of the ingredients or their amounts. You can make all or part of the dish ahead of time. If the potatoes are completely cooled when you make the filling, melt the butter in the microwave so it will blend in easily. Then for the final baking before serving, increase the total time in the oven to 20-30 minutes, or until heated through and cheese on top is nicely melted. I will definitely make this delicious recipe again.

Baked Pork Chops I

Just two for dinner? I used two 3/4-inch thick bone-in, center cut tenderloin included (whew!) chops for my husband and myself. I halved all of the ingredients except for those used to make the sauce. I used a Ziploc bag to shake the chops in the flour and spice mixture, then dipped them into the egg, then tossed them in the bread crumbs in the same bag (saved on dishes and clean-up). I browned them in a skillet that can transfer to the oven, so that saved on another dish to clean up later. Result: the chops were tender, delicious, and flavorful. The sauce was velvety-smooth, and wonderful over the rice I made to accompany. The sauce needed a bit of extra 'zip', so next time I will shake in a bit of cayenne. If I were to make this for more people, I would definitely double the sauce ingredient amounts stated in the recipe. An easy and very tasty recipe for pork chops!

Chicken or Turkey Tetrazzini

An absolutely delicious way to use leftover turkey or chicken! I made the Slow Cooker Turkey Breast from this site (wonderful recipe!). After reading all of the reviews for this tetrazzini, this is what I did, and recommend: use any kind of pasta; increase butter amount to 3 tablespoons, increase onion to ½ cup, increase garlic to two cloves, use any comibination of cream soups--I used 1 can mushroom and 1 can chicken, add 1 soup can of milk, use any type of shredded cheese or shredded cheese blend. I actually put 2 cups of the cheese into the casserole. A deep-sided 13 X 9 baking dish worked perfectly (spray with non-stick coating first). Here is what I did for the topping: after baking the foil-covered dish for 30 minutes, I sprinkled the remaining 1 cup of cheese, a handful of grated Parmesan, and some crumbled buttery crackers over the top. The dish was returned to the oven uncovered for another 10 minutes. What a delight!

Corn Casserole I

Tasty, EASY, and a good side dish to accompany a variety of meals. This could also stand on its own as a lunch offering for children and hungry young males. If you have a corn-lover in your family, this dish is just the ticket. I will definitely make this again and again for my family.

Cranberry Wheat Bread

Absolutely delicious loaf of bread! I followed the recommendations of other reviewers, and doubled the spice amounts, plus I plumped the dried cranberries in water before adding to the dough. I set my machine for a 1½-pound loaf on the Sweet Bread cycle, medium crust. It turned out perfect, and as an added bonus, my house smelled wonderful. This is a great bread to accompany a turkey dinner, toast for breakfast, and to give as a gift (I have done all three).

Easy Swedish Apple Pie

EASY and delicious! Following the suggestions of other reviewers, I added a bit more flavor to the apples. I mixed in 1 tablespoon of brown sugar, 1 teaspoon of cinnamon, and ¼ teaspoon of ground nutmeg with the 1 tablespoon of white sugar--tossing all with the apples. You may want to put a pan or piece of aluminum foil underneath the pie plate in the oven, as some juices from the apples escaped during baking. I served the pie warm, with scoops of vanilla ice cream on top. Yum!

Round Steak Sauerbraten

Easy and tasty recipe for round steak! I cooked the browned meat in my slow cooker for over 8 hours on low, increasing the seasoning amounts for more flavor. When the meat is done and tender enough, remove, and thicken the gravy by your chosen method. Serve with buttered pasta shapes of your choice. Very nice!

Melt-in-your mouth goodness! These tender and flavorful cookies are very easy to make. The dough is easy to handle. I used pecans purchased online direct from a grower ($2 cheaper per pound than at the grocery store!), and double-strength pure vanilla extract. I have tried other recipes through the years in a quest to find THE BEST Mexican Wedding Cakes/Russian Tea Cakes/Viennese Crescents...with the discovery of this recipe, my search is over.
