Baked Pork Chops I

Followed the most helpful suggestions. Made the recipe as written but added one can of golden mushroom soup. Also increased wine to 1/2 C. With good browning, baking time was 20 minutes followed by 30 minutes. It made such great leftovers that I'll bet you could make this on Sunday and just refrigerate the whole pan for an easy weeknight meal!

Simply Parmesan Chicken

Have I had better chicken Parmesan? Yes. Was it more labor intensive and higher in fat? Yes. This is an easy, tasty, relatively healthy weeknight option. I put some spaghetti sauce and mozzarella cheese on top and broiled for the last 5 minutes.

GA Peach Pound Cake

The Best Meatballs

These were very good. I did as other reviewers suggested and baked them on a cake rack over a cookie sheet at 350 for 40 minutes. I used meatloaf mix for the meat(2.5 lbs), packaged bread crumbs, about 1 1/4 cups of water, and added a little bit of italian seasoning. My picky husband's only complaint was they needed more salt and seasoning. May use Kraft parmesan cheese next time to add some extra salt.

Watermelon Fire and Ice Salsa

This was a big hit at a bbq. I made a few changes - used yellow onion instead of green, doubled the whole recipe, used twice as much onion, 2 cloves of garlic pressed, and added some lime zest. Can't wait to make again!

Spinach and Cheese Stuffed Pasta Shells

I left out the fennel, used only 1 package of spinach, added 1 cup of shredded mozarella to the filling, and mixed everything in the food processor to better disguise the spinach for my two year old. It was good,, maybe could use a little more seasoning to the filling

Made it just like the most helpful review suggested, and it turned out great. I don't think the chicken really needs the sauce. But the sauce is nice to have if you're serving with rice.

Chicken Enchiladas II

This was great for a big group dinner. I started wtih 2 lbs chicken. I used onion instead of green onion, added a can of Rotel to the sauce as well as an extra 12 cup sour cream and a can of cream of chicken as others had recommended. It made nine 12 inch enchiladas in 1 large (13x9) pan and one smaller pan and was a big hit!

Chicken Tikka Masala

This was one of the better Indian dishes that I've made. For the marinade, I used 1/2 the cayenne pepper, and 1/3 of the salt. For the sauce, I made the recipe exactly, minus the salt. I also made extra sauce for the amount of meat I prepared, but probably didn't need that much extra sauce.

Southwestern Turkey Casserole

Followed many of the suggestions from the snowlovr review, and it turned out great! Omitted the cream of chicken soup, added a can of Ro-tel, used fewer tortillas, and signficantly increased the amount of turkey.
