Pork Balls and Sauerkraut

I found this recipe in a daily email/newsletter I get. Instead of ground pork I use a 1 lb roll of pan sauage. I also use the boiling bag/instant type rice and instead of regular sauerkraut I use the barvarian sauerkraut, it is sweeter and not as acidic as the regular. Also, since I do not use the whole amount of meat I have to add some bread crumbs or crackers to the meat ball mixture as it is too wet otherwise and I use no seasoning. I love this recipe. I serve it with mashed potatoes. It's a great change from the tomato and beef meat ball recipes. Thanks for sharing this recipe.

Dutch Potatoes

I served these with some small steaks, mushroom gravy and garlic bread. It was fantastic! I didn't follow the recipe to a T but it's a 5 star recipe without my changes and mistake. What I did was added more sour cream becasue I remembered the recipe wrong, added 3 cloves of garlic and the chopped onion (did not saute) to the boiling water and I used a small of cream to mash the potatoes & carrots as well. It would have been fine without the cream. I didn't have chives to add so omitted. I think these would be great for Thanksgiving, they have such a harvest-y/fall flavor to them. I will make these again.

Lighter Banana Muffins

I was really impressed that this muffin was moist since it had no fat in it. I used 1/2 c oats and 1/2 c unbleached wheat flour with the 1 c white as per another reviewer, also I used 4 bananas and 1/4 c lowfat buttermilk. I also used 1/2 Diabetasweet brown sugar subt. This was a muffin one can feel good about eating. I added nuts to mine but when I make them again I will use mini chocolate chips. Thanks for a great recipe.

Heavenly Hot Dog Sauce

I didn't care for this hot dog sauce, it tasted like homemade sloppy joes and I don't care for home made slopy joes (I prefer manwich. I gues I was expecting a more chili taste. I added everything and even added garlic and onion powders as per reviewers statements, but it just didn't help. My personal taste buds are at fault not the recipe. I will not be making this again.

Chicken a la King II

My one complaint was like the others it was too thick. I was thinking it was my fault becasue I had no chicken broth so I used boulion powder as I have it on hand always and used all milk and some cream for the liquid. I added water until I got it at the consistancy I liked. The other changes I made was I used one 6 oz can of Albacore Tuna as I had no chicken on hand and I added a small amount of frozen peas. I thought the dish had good flavor like I remember a la king should taste like. I put it over the rice. I'll make a note to reduce the flour next time, I will make this again.

Caramel Pudding

This pudding had a good caramely taste but the texture was like eating homemade paste or a very thick gravy . I guess I'll keep looking for a good caramel pudding recipe.

Zucchini Relish

I'm still deciding if I like the taste of raw Zucchini or not, but this was pretty good for raw. I used one tsp. of Diabeti Sweet (an artifical sweetener)and it was sweet but not overpowering. I can't imagine using a whole tablespoon of sugar substitute or sugar in this recipe. I want to try it next time with fresh basil and just a touch of olive oil. The dried basil does work but I'm sure the fresh will be better. I also subsituted pimentos for the red bell peper only because I didn't have any fresh bell pepper, it's the same thing worked out fine. It looks very pretty. Thanks for a good recipe.

Chilie Pork Tacos

I just tried this recipe today and it is fantastic, so much flavor. I did make a few changes; instead of adding chili powder to the meat I added cumin instead. I also didn't have the rice vinegar so added apple cider vinegar instead. Instead of the pintos I added a can of chili beans in chili gravy and it was perfectly spiced for me. I also topped mine with a relish I made of green onions, green bell peper, chopped tomatoes, dried parsley, and a small amount of olive oil and some apple cider vinegar. Used the extra juice in the relish to pour over the meat/beans. They were great and needed nothing else to top them. Definately a keeper. Thanks for sharing.
