Fresh Coconut Layer Cake

the "real" coconut flavor really shines through here. You can definetly tell it's not a store bought cake or a generic cake recipe modified to taste coconutey. It does take a little time and effort to make, which is why I didn't rate it higher. But the flavor is really good. I didn't have any problems with the recipe as is technical or flavor wise(I didn't add or substitute anything). It's a good cake, but not "to die for" in my opinion.

Honey Fruit Salad

The dressing for this fruit salad is so light and refreshing! It lets the natural flavor of the fruit shine through while adding just a touch of sweetness and texture. I actually used strawberries, honeydew melon, grapes, and pineapple in place of the original fruit. I'd say any 7 cups or so of fruit would work beautifully. I'll be keeping this recipe.

Root Beer Cookies

i'll keep the frosting recipe, but i'll use it on something other than these cookies. the bater was so cakelike i tested just one cookie in the oven and it turned out too doughy on top. so i added 1/4 cup flour and put it in the refrigerator for a while which made it easier to handle. also, wait to add the extract into the frosting until after you've mixed the oher ingredients together. (and soften the butter by the way) save yourself from the extra work of beatig out root beer glumps. i also waited to add the frosting to the cookies until they'd cooled that way the frosting didn't melt off the cookie. overall they had a nice taste, but they were a little too hard to handle.

Rosemary Roasted Turkey

this was my first attempt at roasting a turkey, and I was really happy with how easy it was. the garlic and herbs made the turkey flavorful and made the house smell nice too.

Easiest Peanut Butter Fudge

i first tried this with the different amounts suggested. i think i would have liked the original recipe better, as it wasn't quite as sweet as i thought. as it is, it still tasted very good. smooth texture. easy to prepare.
