Homemade Pancake Mix

This easy recipe is way better than Bisquick. It's so easy to whip some up in the morning. Next time I'm going to try replacing the milk with buttermilk and see if I get better results. UPDATE: Yep, buttermilk makes the pancakes better. Slam dunk!

Hungarian Goulash I

This is an easy, cheap, and hearty recipe that has become a weekly staple in my home. It's the perfect thing for dinner on a cold Chicago night. The only tweak I make is that I chop the beef into smaller pieces -- probably about 3/4 inch cubes -- which helps it to cook a little quicker. I usually have to add a bit of water, 1/2 a cup or so. I do find that even with egg noodles, this is more like 4 servings for adults.

Chicken and Bacon Shish Kabobs

Fan-freaking-tastic! This is a great teriyaki-style marinade. We also grilled the veggies separately and doubled the marinade, reserving a few tablespoons for brushing over the meat after it came off the grill. We added some garlic & ginger powders as well. The only change I'd make is to marinate the chicken for 3 or so hours.

Quick and Easy Chicken Noodle Soup

Quick, easy, and it tastes just like when I make it from scratch -- but it takes 1/4 of the time! I usually add some dried sage and parsley and double the butter. Save some for lunch because it tastes even better the next day.

Honey Glazed Ham

This recipe rocks. I cooked it for three other people and they all raved about how juicy and tasty this ham was. You can go with or without the cloves, but I would recommend scoring the meat so the juices really soak in. I actually like this better than the name-brand Honeybaked Ham.

Catherine's Spicy Chicken Soup

This is, by far, one of the most popular dishes I make. It's easy to make it large batches and everybody loves it. I go through the effort of cooking & shredding the chicken myself, which I think makes a big difference in the texture of the soup. It has become a winter staple in our house, and it is great for leftovers.

Ooey-Gooey Cinnamon Buns

Oh my God these are SO GOOD. They're delicious when you first take them out, they're delicious the day after cold, and they're yummy when they're reheated in the microwave for 30 seconds. I used walnuts this time, which I liked. At the husband's request next time, I think I'll leave the nuts out of the filling and use pecans in the syrup. I bet it'd be good with raisins rolled into the filling as well.

Easy Granola Bars

This is a great recipe as-is, absolutely no adjustments needed. The oats/condensed milk/butter/coconut base is great for experimenting; I add all sorts of various dried fruits, nuts, and sweets. My favorite is cranberries, macadamia nuts, and white chocolate.

World's Best Lasagna

Italian Beef Sandwiches

My husband and I love these sandwiches! I ended up making 2 sandwiches on huge hoagie buns. Even better if you butter up the buns, add a little cheese, and toast lightly before adding the beef. I love that it's so quick to make.

Chicken Stock

Good, solid base. I added a few other herbs (some parsley, sage, and oregano), but still found the flavor to be a bit bland. It worked well in Catherine's Spicy Chicken Soup; it's better than the boneless, skinless chicken breast broth that the first half of that recipe calls for.

This recipe was OK. I made a bunch of it for a potluck, and didn't get many raves but I didn't get any complaints either. I added some blueberries and used low-fat strawberry yogurt, and one low-fat vanilla yogurt.

Greek Chicken Pasta

This was just OK as-is. When you could get a bite of pasta, tomato, & feta at once it was yummy. I just didn't think there was enough of the saucy stuff to go with the pasta. Next time I'd add more feta, add kalamata olives, and some of the juices from the jar of artichoke hearts.

Chicken Breasts with Herb Basting Sauce

This dish was pretty bland, and the drippings weren't really enough to use for basting. If I were to make this again (which I wouldn't), I'd probably use the ingredients as a marinade.
