Orange Marinated Pork Tenderloin

All I can say is WOW. I added some red pepper flakes(we like a little spice) and the zest of a fresh orange to the marinade and then marinated it overnight. I also added a bit more orange zest to the sauce and reduced it by half, adding some cornstarch to thicken it a bit. The results were awesome. My husband can't stop talking about it, and can't wait for the leftovers.

Andrea's Pasta Fagioli

I grew up with "beans and macaroni" being thick. So I added the ditalini in the base and used beef broth instead of water. Also just a little crushed red pepper for some zing. End result wonderful and exactly what I was looking for. Just like grandma's.

Zucchini Egg Bake

Tired of making the same old eggs I found this recipe and we loved it. I didn't have marjoram so I used rosemary instead. I also cut the butter by half not thinking so much was needed. Being on a low carb diet this dish is perfect.

Seafood Au Gratin

I made this last week for Sunday dinner and my husband can't wait to have it again. He calls it "loving in a bowl" . I cheated and used imitation crab and frozen smaller scallops and shrimp , to keep the price down. I mixed cheddar and mozzarella cheese since I didn't have provolone. Turned out great. Even my mom who is not a seafood eater loved it.

Italian Chicken and Chickpeas

I love this recipe. My husband is not a fan of chickpeas so I make it whenever he has steak( I'm not a fan of). I add a box of frozen collards or mustard greens. The seasoning is perfect, and there is always plenty for leftovers. Even better the next day.

Beef Bourguignon II

I made this last Sunday, it was a gloomy day , perfect for having the house smell so good while it cooked. The beef was tender and was even good as leftovers. I used 1 cup wine and 1 cup beef broth, served over noodles, perfect!. I plan to make it again today, definitely a keeper. Thanks !

Gobble Up Granola Snacks

I have made these twice now and it cant be easier to make. I use 2/3 cups instead of 1/2 cups and use honey instead of corn syrup. I have used trail mix in a batch and choc chips in the other. Took them to a volleyball tournament and not one was left, even the adults enjoyed. Great and healthy snack.

Cousin Cosmo's Greek Chicken

This has become a family favorite and added to the regular menu rotation. I use white wine instead of chicken bouillon and water and add artichoke hearts and black olives. I finish it off in the oven for about 15-20 minutes. Then top with extra feta cheese. YUM

Slow Cooker Adobo Chicken

I wasn't sure about this recipe, but tried it anyway.The flavors were good,I followed other recommendations of bay leaves and peppercorns.Served with brown rice with the "sauce". Maybe next time I'll leave in the crockpot for 6 hours, 8 was to long. Easy and simple ingredients. Thanks.

Delicious Ham and Potato Soup

I made this on a cold, snowy Friday night. It was perfect. My husband wasn't sure he'd like ham soup, but now it's one of his favorites. My daughter ate all the leftovers, as it warms up nicely. I followed the recipe without changes, it doesn't need any. Delicious!!!

Foolproof Rib Roast

I cant believe how easy and how good this roast was. I dont eat beef but everyone couldn't stop talking about how delicious it was.My husband was nervous about the process but when we cut into it and it was perfectly cooked, itwas worth not opening the oven door. The only addition was some steak seasoning to the rub otherwise cooked as directed.
