Maple Cajun Mahi Mahi

I made this recipe for my daughter and I. This was excellent. I did not use all of the creole seasoning as she doesn't like things too spicy. This was a really simple and tasty recipe for fish. I can imagine this on salmon as well!

Marilyn's Green Beans Italiano

I was looking for a real Italian recipe with real ingredients. I love this recipe. I did make some changes- I used a 1 lb bag of frozen green beans, cooked according to directions, then (seperate pan) melted the butter (only using 2 Tbsp) and added minced garlic, once brown, I added the green beans and mixed together. Then, I added the parmesan cheese. I omited the parsley (taste) and bread crumbs (making it low carb!). My daughter ate 3 portions! When I'm not low carbing, I plan on making this recipe exactly as is.

Flavorful Flounder

Excellent Recipe. Easy. I only changed 2 things, I used half olive oil/half melted butter for a healthier version and I didn't have fresh green onions on hand so I used dried chives (2 Tbsp). I loved it and so did my kids. I will definately make again. I used fresh fish and had no trouble with the fish falling apart like others said. I may use variations the next time (garlic, etc).

Peach Muffins

IThe first half-batch of theses muffins I bakedfor 22 minutes at 400 and they all burned. I baked the 2nd half at 350 for 22 minutes and they were perfect. Still, they were really missing flavor. That is even after adding 1/2 cup of peach juice. For me, these were a big dissappointment.

Creamy Au Gratin Potatoes

This recipe is amazing. I love my mom's au gratin potatoes- but this recipe takes the cake! I sliced my yellow gold potatoes and sliced them a little thinner to reduce baking time... added extra salt and pepper (based on reviews)... on the top I added extra cheese and bread crumbs. Delicious and plenty of flavor!

Groovy Green Smoothie

Even after reading the reviews... I just couldn't believe that you couldn't taste the spinach. But with the banana...you can't! :) I chose mango and blackberries for my first try- it came out red. Also, I tried adding flaxseeds... yuck. I won't do that again. Maybe adding flaxseed meal would be better. I can't wait to try different versions! :)

Oranged Cranberry Sauce

I made this recipe exactly as stated. At the end I did find it to be too loose, so I drained some of the juice out. I did not care for the flavor. Easy to make, but very tangy and not nearly as sweet as traditional cranberry sauce. I'll be looking for a new recipe to spice up the standard.

Eggplant Parmesan II

I love this recipe. I make a lot of Italian meals, but this is the first time I've made eggplant parm. It's so easy and delicious. I made a smaller batch (since it was for 2) and it was really good. My husband doesn't even like eggplant and he went back for seconds! I did use kosher salt on the eggplant first and then rinsed (as suggested). I also used romano cheese, because it's my favorite.

Black Bean and Corn Salad II

This recipe is surprisingly simple and tastes amazing. I didn't have limes on hand and used the refrigerated juice and it still came out good. The recipe is also flexible, if you are missing an ingredient or two you can substitute or even leave out. Also, I used the leftovers to make Tex-Mex Omelets. Delicious.

Honey Baked Chicken II

I love this recipe- very easy and wheat/gluten free. Great with tortilla chips. I only used one can of corn, because that's what I had- and it came out so good the first time, that I continue to make it with just one.
