Best Lemonade Ever

One piece of info that would have been nice to have prior to making this is about how many lemons to buy to get the 1 1/2 cups of juice. I never made lemonade so had no idea. I got 5 lemons, squeezed the heck out of them, and came up 1/2 cup short. I would suggest buying at least 8 lemons.

Pistachio Fluff Fruit Salad

Very tasty. However, if you are concerned about presentation, be warned that this is not a "pretty" dish. I should have probably realized that everything would be cool-whip colored (with a hint of pistachio). Don't worry about your bananas turning brown, you can't see the color of any of the fruits anyway. I added fresh red grapes, fresh blueberries, pecans, apples, and toasted coconut. It really was very good though. I brought it to a Memorial Day Cookout and made an ingredient list to attach to the bowl for anyone who might be afraid to try something in which they couldn't tell what they were eating.

Aussie Omelet

After reading the previous reviews for this I thought I couldn't go wrong, but what a disappointment! I made this for Father's Day breakfast this morning, and it just wasn't good. I started out following the recipe exactly as written even though I was confused about making an omelette in a saucepan and how 5 eggs would turn out 4 servings when all cooked together in a saucepan (it doesn't). Upon noticing that the eggs were getting brown on the bottom and the top was still liquid, I dumped it out in to a fry pan. If you try this, I recommend starting with a fry pan. I think a teaspoon of curry was way too much. My husband asked, "what is the weird smell coming from the eggs?" I thought it was edible, but not wonderful, and a waste of the time it took to chop the vegetables and a waste of good shrimp! My husband on the other hand couldn't even eat it. So much for a wonderful Father's Day breakfast... he proceeded to make himself some Eggo Waffles!

Shrimp and Asparagus

Very good! I read the reviews and added some creole seasoning (not much)and was cautious of the amount of olive oil & butter. However, upon realizing that the butter & olive oil make up the sauce that will coat all of that pasta, I ended up using almost as much as the recipe called for. I did think there was a bit too much pasta, and ended up leaving about 1/4 of the pasta out before mixing everything together, but still used all of the butter sauce. We really enjoyed this.

Aussie Chicken

Wow! This was so good! I used monterey jack and cheddar (in place of the colby) and used some pancake syrup instead of corn syrup (because I didn't have any corn syrup). It turned out perfect, quite a "manly" dish!

Mini Meatloaves

My husband told me he did not like meatloaf, but would give it a try when I told him I was making this. One bite, and his opinion of meatloaf is forever changed! My kids loved it too! I added some chopped onion and a bit of worcestershire and used a muffin pan, which made 6 loaves. My picky 6 year old son loved it so much, he ate 2 (1/3 of the entire recipe!). He told me he wants me to make it all of the time! I'll definitely use this recipe again. Thanks!

Garlic Mashed Potatoes Secret Recipe

Very good! I'm not sure how anyone could say these lacked flavor, they pack quite a powerful punch. I made them a few hours before serving them, so put aluminum foil over the bowl and set the oven on warm. I think that helped tone down the garlic a bit. I also followed other reviewer's advice and waited until I was finished mixing everything and then stirred the cheese in. I didn't have to add more or less of anything, these were great!

Barbie's Tuna Salad

yummm... as my husband described it, a very "light and crisp" flavored tuna salad without the "fishy aftertaste". I didn't have minced onion, so I chopped up some fresh onion and added that instead. Very good! Will make this as a lighter alternative to my usual tuna salad with hardboiled egg.

Baked Dijon Salmon

Great new way to make salmon. However, I could hardly taste the dijon/honey mixture. Next time I will put it on heavier even though the recipe says to brush it on lightly. For my kids, I drizzled honey on the finished salmon on their plate to sweeten it up and they loved it.

Delicious Chicken Casserole

Very good! I increased the amount of chicken and rice and used about 2/3 cup of chopped onion instead of onion powder. It was perfect! The kids loved it and my husband said it was the best casserole he's ever had.

Paprika Pork Chops

For a different kick on this, or if you don't like saurkraut, try using mushrooms! I just made this tonight and threw some fresh sliced mushrooms in to sautee with the onions and cut back on the sourcream & added half a can of cream of mushroom. Less kick then the original but very smooth, creamy, & tasty!!

Lemon Fish Bake

I didn't taste the mixture under the breadcrumbs as much as I would have liked to, but this was still really good and I will try it again. The problem could have been that I only had italian breadcrumbs, and so the spices in that might have overpowered the other flavors. My husband loved it.
