Cheese Fondue

Totally Groovy Chocolate Fondue

Very good recipe! I made a few changes which worked well: I used Kahlua instead of the cherry brandy and a 50/50 mix of semi-sweet and 60% cacao chips. I used some instant coffee ground and just mixed it in instead of brewing coffee and left out the cinnamon. Last but not least, I doubled the cream and alcohol to make it a little more smooth. All in all, definitely a keeper!

Pasta with Mock Creamy Tomato Sauce

This was good, though more of a pepper sauce than a tomato sauce. Might be better if you substituted some crushed tomatoes for the peppers.

Soft Onion Breadsticks

These are pretty good. I also double the onion and usually top them with whatever spices I have lying around. I've also mixed some fresh minced garlic into the dough which adds a nice bite to them.

Bourbon Pecan Chicken

This was ok. The sauce was very mustardy for my taste, and I had a hard time getting the pecans to stick well to the chicken. My wife liked it a lot more than I did.

Sesame Seared Tuna

I had a difficult time searing the tuna without either burning the outside or having the middle still be very cold. Also, the marinade didn't seem to add a lot of flavor. Sorry, but I was a little disappointed.

Delicious! Be careful with the reduction because it can end up with a very strong flavor, but putting a little on top of the chicken really makes the dish pop.

Homemade Black Bean Veggie Burgers

We are not vegetarian but were looking for something healthier than traditional burgers, and these were great. I froze them which helped them hold together. I also broiled them instead of baking/grilling, and that seemed to work well.

Salmon with Fruit Salsa

The lemon salmon itself was boring, but the fruit salsa was very good! I cut back pretty significantly on the jalapeno because my wife and I don't like spicy--we used 1/2 a pepper, and it was plenty spicy for us!
