Amish Hash Browns
5 out of 5 with my changes-- I used only one egg, lots of Mrs. Dash, no oil, and broiled 5 minutes per side. (I lined my broiler pan with foil, sprayed PAM right underneath when placing the raw potato cakes and again when I flipped them and they didn't stick.)

Baked Oatmeal II
Instead of the butter (HEALTHIER!) I used half applesauce and half pureed zucchini (raw) along with a couple tablespoons of olive oil. (You could use all zucchini or all applesauce.) The texture was amazing and it was SO nice to be able to bake it the night before and have it ready for a quick breakfast. I doubled the recipe so we could eat it for 2 or 3 mornings.

Apricot Glazed Carrots
YUM!!! With these additions: a healthy scoop of OJ concentrate, and a little less than 1/4 cup brown sugar, orange zest from the whole orange, heavy on the apricot jam. Next time I'm going to try this glaze on chunks of fresh sweet potato, and bake it all together. My favorite glazed carrots.
