Poor Man's Fried Rice

This was a good Lenten meal. I followed the suggestions of another reviewer and added peas and carrots, also sliced celery. My husband enjoyed it.

Chewy on the inside, with a sugary crunch on the outside, these cookies go well with a cup of tea. I followed the recipe exactly, and my husband and son loved them.

Kidney Bean Salad

This is an old recipe I was pleased to find again. I substituted chopped dill pickle for the sweet pickle relish, used light mayonnaise seasoned with a dash of onion powder and a T. of dill pickle juice, and proudly served a dish very much like one that was a childhood favorite.

Easy White Cake Over Fruit

This was a good way to use up some of the unsatisfactory fruit on sale this Spring. My strawberries were red and hard, not ripe, and for the rhubarb I supstituted an equal amount of sour imported seedless grapes, cut in half. Otherwise, I followed the recipe as printed and was very satisfied with the results.

Cabbage and Kielbasa

I was looking for a way to cook hot dogs and cabbage--that's what I had on hand. I adapted this recipe using olive oil instead of margarine and green cabbage instead of savoy, boiled potatoes instead of canned. It was delicious and I intend to keep this recipe in my favorites box.

Bottom Round Roast with Onion Gravy

Bottom round is so lean it is not easy to have a roast that is not dry and tasteless, but this was delicious. So was the gravy! I browned the roast on all sides first. I also used cider vinegar and added an extra 1/3 cup of water when I added the vinegar and bay leaf. My husband loved it.
