Double Chocolate Chip Macadamia Cookies

Reviewed: Mar. 8, 2014
Loved this recipe, it was just the right balance of sweet and savory with the nuts. I always use butter, but I amde sure it wasn't completely melted so they didn't spread out too much, and I always bake with parchment paper, which makes these a nice shape, not to thick or thin. If you use salted butter, you only need a little bit of salt. Will deinately do these again!

Frosted Oatmeal Bars

Reviewed: Mar. 2, 2014
I liked the simplicity and wholesomeness of these bars, I would use less honey, they were very gooey, even after being in the refrigerator. I would add more grains or cereal, but over all they were good otherwise.

Sour Cream Blueberry Coffee Cake

Reviewed: Jul. 30, 2013
This is the best Blueberry Cake recipes I have ever made and tasted! I didn't have any issues with making the layers, I simply plopped the blueberries on top of the first layer of batter, creating a deep ribbon of blueberry in the middle and did the same with the remaining batter. It doesn't have to be a smooth layer, there is baking powder in the mix, and it helps puff up the batter and topping. I added a little bit of nutmeg and mace, as these are alway my fav spices with cinnamon. Don't be put off by the reviews...this is a keeper!

Pound Cake with Blueberry Sauce

Reviewed: Sep. 21, 2010
Surprisingly simple, light and tasty, great for modified cholesterol diets, but you could probably swap the 4 eggs for egg beaters if you needed to. I changed the sauce part to fresh berries, and skipped adding more oil, yummy!

Crumb-Topped Scallops

Reviewed: Mar. 6, 2010
I loved it! Had to add more time to cooking, since I used giant scallops. I liked the delicate texture and the crumbs made the sauce extra tasty. I used Italian Style crumbs, and I added some capers for a bit of sass. A squeeze of fresh lemon really made it sing. My pictures is above, thouse it was more colorful with the addition of celery and green pepper chopped small.

Banket

Reviewed: Dec. 20, 2009
My dad is from the Netherlands, and it isn't Christmas unless the Banket is baking. While I enjoy it, it is very rich and filling, and we only do this once a year, usually in the shape of an initial. I married into a big Irish family, thus the M for my married name in the pic you see with this recipe. I posted it after our Christmas party last year. This recipe is good, but read all the how to's as you really want to make the pastries narrow and use the filling sparingly, as it will ooze out all over. Merry Christmas, to you all!
