Mama loves to bake!

No meat for Lent. It's a calling for me.

I love meat.  A great steak can make my night.  I love a good pork tenderloin.  Chicken-yes please!  Mmmm prime rib.

So, why do I feel called to give up meat for Lent?   I wonder if its because deep down I feel like I need less meat in my diet...for health as well as economics..a little cleaner lifestyle all around.  Or is it?  I need ideas.  I like seafood, most all, but really don't branch out far from salmon, scallops, shrimp, catfish...even those I want to try different ways to prepare.  Mushrooms and beans are in my diet on a regular basis, but not as the main act.  I have a lot of work in front of me if I am going to stay meat-free for the next six plus weeks.  I would love to hear words of wisdom to help me along.  Ideas for recipes as well as thoughts and foods.

Have you tried Soy "meats"? Soyliso tastes pretty much like Chorizo, and Tofu will absorb whatever flavors you cook with it. Kung Pao (extra spicy) is one of my favorite tastes, so during lent, I do tofu Kung Pao.
