Although it was very simple, after reading the reviews I was rather disappointed. I used 1% milk, added approx. 1 tbsp butter in addition to the canola oil, used only 2 1/2 medium potatoes and followed the rest verbatim. Pretty much tasted like spiced up tomato soup. I may try this again but will cut up fresh tomatoes and add a bit of tomato paste or something.
Okay it's now day two after having cooked and refrigerated it all and it definitely tastes better. My advice would be to cook ahead and serve for lunch or something the next day - the flavours mixed nicely.
