Carrot Cake III

By far the best carrot cake ever! Followed the recipe exactly (except I omitted the pecans) and it turned out perfect! Would recommend half the amount of icing sugar for the icing as it's quite sweet.

Low-Fat Blueberry Bran Muffins

Very good except I did it with fresh chopped apples (same amount) and when I make it again, I would add cinnamon and nutmeg, maybe even ground cloves to give it some seasoning!

Butter Chickpea Curry

Although it was very simple, after reading the reviews I was rather disappointed. I used 1% milk, added approx. 1 tbsp butter in addition to the canola oil, used only 2 1/2 medium potatoes and followed the rest verbatim. Pretty much tasted like spiced up tomato soup. I may try this again but will cut up fresh tomatoes and add a bit of tomato paste or something. Okay it's now day two after having cooked and refrigerated it all and it definitely tastes better. My advice would be to cook ahead and serve for lunch or something the next day - the flavours mixed nicely.

Campfire Banana Splits

Yummy treat for around the campfire! Didn't use a grill and instead wrapped in tinfoil and put directly into the fire (around the edges). Turned out perfect!

Extra Extra Rich Brownies

This recipe was amazing! I adjusted the sugar and cocoa (switched amounts) and baked for 15-20 minutes. Don't overbake!! Added sugar to the frosting and a little vanilla for flavour. An absolute fave and will do it again - only problem was the lack of binding so might use an egg next time and definitely will cut back on the oil.

I enjoy balsamic vinegar and all the other ingredients but wasn't overly impressed with this recipe. Too much liquid (add cornstarch maybe?) and the vinegar is a little in excess (add sugar?).

Spinach Tomato Tortellini

Fabulous recipe - super fast and easy! I changed the ratio of cream to milk (I decreased the amount of cream to lower the fat content and added a bit more milk and flour to compensate) and I used fresh basil instead of dried. I also used beef tortellini instead of cheese.
