My cooking tragedies
I bet my brother wishes he could post here. Besides cooking the turkey with the bag of giblets in it, my downfall is starting to cook something, then realizing I don't have the proper ingredients. I then start to substitute and the end result can be pretty far from the original recipe. Before my brother eats anything, he will ask not "if", but "what" have I substituted. It's a standard joke. I'm working on that.

Microwave Corn on the Cob
There is nothing worse than heating up your kitchen to enjoy summer's corn. I have a variation that I use all the time for my family of four. I husk 4 ears of corn and rub each ear with butter. I place them side by side in a 9x9 pyrex dish and cover this dish with saran. I microwave all 4 ears for 5-8 minutes (depeneding on the strength of your wave). They are now ready for a dash of salt! I love making corn in the microwave.

Phyllo Turnovers with Shrimp and Ricotta Filling
I have made these twice now. Both times I could NOT stop myself from sneaking bites it as I made it....I could almost eat this with a spoon. Phyllo, while impressive, is a pain, so the 2nd time I made the recipe, I used wonton wrappers. I also added more shrimp and hot sauce b/c some of the ladies said it needed more flavor, but others said it was fine. Just a matter of preference. I also think this would be good over linguini if it was thinned out a bit more with the cream...just tell me how!

Ham Tetrazzini
I am giving this 5 stars b/c each the 4 members of my family thought it was great, and I was sure my husband was going to turn his nose up at it. I have to say that I was skeptical b/c the base was soup, but the flavor was there. Really creamy, too. Great way to use leftover ham, and it couldn't have been easier to make. I followed the recipe exactly - always do the first time I make anything. Thanks for sharing!
