Delicious Ham and Potato Soup
I made this today with leftover ham and mashed potatoes, and it was GREAT. I didn't peel the potatoes because I'm currently living with my in-laws, and they don't have a veggie peeler, and I don't think the peels affect the soup at all, or if they do, it's in a positive way. I also added some shredded carrots for fun, as well as the leftover mashed potatoes. This was really easy to make and had a delicious flavor. I think that the mashed potatoes add another dimension of creaminess and really elevate the soup.

Peanut Noodles
These were very one-dimensional, with the peanut butter being overpowering. The sauce was very thick and coated the noodles to the point of being overpowering in texture. I thinned this with a little pasta water and still found it to be too thick.

Cheesy Sausage Pasta
This was great! I used chicken sausage (less fat), fire roasted tomatoes, whole milk instead of cream, and a diced green pepper instead of a sliced orange pepper. I also added salt, pepper, and thyme. I will definitely make this again!
