Cheese Soup with Broccoli

Reviewed: Dec. 12, 2013
The taste and consistency of this soup is wonderful. It's so hard to find a soup that's just the right amount of creamy and cheesy and this is it. I did add a few things for personal taste. I used cauliflower (cause that's hubby's favorite), added some leeks, roasted red peppers (for color), and a little cayenne. I added some bacon and sautéed the onion in that. I did add the butter but about 1 tbs less. Great taste and consistency.

Best Easy Chicken Croquettes

Reviewed: Sep. 22, 2012
This was very easy to prepare and I made them as directed. I like the fact that it's mostly chicken and only a few breadcrumbs. It made 6 small patties and my husband, who can't eat too much in one sitting due to a medical condition, ate 4 of them. I put too much milk in the soup so I added a scoop of country gravy mix. It was great. I did saute the onions and celery as others suggested. It had just the right amount of poultry seasoning. These are much better than restaurant or frozen. The next time, I might add just a little minced red or green peppers cause I like that taste in them.

Panko Crusted Mashed Potato Cakes

Reviewed: Aug. 27, 2012
My husband and I really liked these. I added extra onion grated finely in the food processor, salt and pepper. I skipped the flour and egg for dredging and did have to add some flour to the mix to get it firmer and easier to work with. I formed the mix into a ball, rolled in the panko crumbs, and put in the oil. Then I flattened with the spatula. Make sure the first side is crispy before turning. I was making open faced hot pork sandwiches to go with these but my hubby just put the pork and gravy over the potato cakes. Awesome.

Zucchini Alfredo

Reviewed: Aug. 12, 2010
This was a great recipe. I added onions, carrots, and green beans and did not use the pasta. I also added fresh parsley, green onions and basil toward the end. I added cayanne pepper flakes. I thought the sauce would be too thin but after I added the parmesan it was perfect.

This was absolutely, positively, fantastic. I followed this recipe exactly. I gave some to my sister and my friend. They both wanted the recipe. Hubby just loved it. You don't need to change a thing.

Alfredo Sauce

Reviewed: Oct. 2, 2008
This was very easy and delicious. I didn't have heavy cream so I used half and half and 4 oz cream cheese. I also added garlic, onion, petite peas and crab meat then mixed it with small shells. My husband and I love it.

Quick and Easy Alfredo Sauce

Reviewed: Jul. 28, 2007
This was the best alfredo sauce I ever had. I made it with shrimp, carrots, and snow peas. I used fresh garlic, asiago cheese (didn't have parmesan) and half and half. Put some scallions on top. My husband is still raving about it.

Banana Crumb Muffins

Reviewed: Jun. 27, 2007
These muffins were delicious. It actually made 12 muffins. I made them on Sunday and was going to take some in to work on Monday but alas, there were none left. The streusel topping was the perfect finishing touch.

This could be a five star restaurant recipe. My husband asks for it all the time. I serve it with rice and fresh asparagus.

Best Brownies

Reviewed: Apr. 8, 2007
My husband loved these brownies. I've been making brownies for years but they always turn out cakelike and I throw about half away. These were rich and dense, just the way he likes them. The frosting made it extra rich. There are never any left over.

Hot Artichoke and Spinach Dip II

Reviewed: Apr. 8, 2007
This is the best spinach artichoke dip I've ever had. Even my brother in law ate it and he's like Mikey, "He won't eat anything."

Apple Crumb Pie

Reviewed: Feb. 24, 2007
I made this last night for dessert. My husband loved it. Although I'm not a fan of pies, this was the best. Hmmm, I wonder what other pies I can make with this recipe. Thanks.
