Out of this World Turkey Brine

This brine resulted in the best, most flavorful, juiciest turkey we have ever made. My husband is a big turkey eater(orders it in restaurants) and said this was the best turkey he's ever had. I would have to agree. I'm a white meat eater and even the white meat was moist and juicy. I brined it for almost 48 hours in the fridge. I mixed the brine in one of the XL ziploc bags, etc.....put two plastic kitchen garbage bags over that and kept it in my fridge. I roasted it per Alton Brown's method (had seen it on Good Eats and wanted to try his technique). Turned out golden brown on the outside and moist and juicy on the inside.

Apple Pecan Cornbread Dressing

I made this stuffing per the recipe. It was hands down the best stuffing I have ever eaten. My husband said it was the best he has ever had as well. He asked me where I kept the Stove Top......I looked at him confused and he said he's throwing it all away....he wants this dressing/stuffing from now on. Addition to earlier review re: sweetness.......I have made this recipe 3 times now. The first time the flavor was perfect. The second time the dressing was too sweet...much sweeter than the first time and I didn't care for it (stunk too because I had guests that time). The third time (made it yesterday for Father's Day) the flavor was perfect again. The first and third time I used the apple juice you buy in the container....the second time I forgot to buy it and used the kid's apple juice drink boxes....so......if you use juice drink boxes the stuffing may be too sweet....didn't think it would make a difference...but there you have it. Also, I use Gala apples and it's YUMMY!!!!

Sue's Hot Fudge Sauce

I am a chocoholic and all I can say is, "WOW...this sauce is pure bliss". It almost has a caramely flavor when you pour it over ice cream. I caught my husband eating it right off the spoon when he came home from work. Thumbs up!!! No more jarred hot fudge for us!!!

Gingerbread Men

This is the first time I have made gingerbread cookies. I made these with my 3 year old daughter and they were delicious. The dough was easy to work with and everyone who tasted them loved them!! We will definitely be making these again!

Sweet Dinner Rolls

I am a bread connoisseur and all I can say about these is YUMMY!!!! They are so good!! They were really easy to make using my bread machine. I'm thinking of using this recipe to make cinnamon rolls Christmas morning. An excellent dinner roll...so much better than Pillsbury!!!!

Praline Sweet Potatoes

I admit that this is a very sweet dish. But, it is good and my husband loved it. It could easily be added to the dessert table I perosnally don't have a trouble eating a little dessert with my main course. Yummy and sweet! Thumbs up from us!

Blue Cranberry Sauce

I made this for my husband this Thanksgiving. I wanted to make his a fresh version rather than the canned stuff that makes that funny suction noise when you remove it from the can. He did not like this and neither did I. We agreed that it was too tart (and he likes his sauce less chunky) so we made it into a jam like consistency and added additional sugar. We still did not like it. The allspice flavor is too much. I felt like I was eating a bag of potpourri. To each his or her own. Looks like it's the funny looking canned stuff for us.

Grandma's Green Bean Casserole

I am not a green bean fan and had never tried the standard muchroom soup version because I don't like mushrooms either. My husband likes green bean casserole and I wanted my 3 year old daughter to try it as well. All 3 of us loved this casserole (me...the green bean hater included). It was simple to make and wasn't overpowering in flavor. Thumbs up from all of us!!! My daughter loves sour cream so that was an added bonus for her.

Jay's Signature Pizza Crust

This is a very workable pizza dough...which for me is half the battle. I did have to use quite a bit of flour to make the dough "not sticky", but once I got there it was a very nice texture. My husband says it's his favorite pizza crust yet (and believe me, I've tried a lot of them). I also liked this crust...although I'm still a little partial to my mother's recipe. Maybe it's because she used to take the extra dough, braid it, bake it then slather it with butter. Anyway, thumbs up to this recipe. Thanks Jay!!!

Spiced Pumpkin Seeds

These little guys are bursting with flavor. My only question is, does anyone really take the time to shell these things? We carved 3 large pumpkins this year and it took me long enough just to separate the seeds from the pumpkin goo. The kids loved them....only problem is my 17 month old daughter feels left out because she can't try any....maybe next year.....

Ground Beef Shepherd's Pie

I liked this recipe, but would strongly suggest adding salt and pepper as listed ingredients. It was very bland. I know this because my husband salted it and he never salts his food. With the added salt it was really good. I also substituted peas and corn for the green beans (I don't like them) and used about twice the mashed potatoes. My 17 month old daughter loved it (and I have trouble getting her to eat meat). She ate a big bowl of it. I will make this one again making the adjustments I mentioned.

Awesome Carrot Cake with Cream Cheese Frosting

I didn't like carrot cake until I tried this one!!! I made it for my mother in law's birthday. It was so moist and good....and the frosting...yummy!!!!! I used the full amount of oil but did not use the juice from the pineapple. It turned out great!!! I did have to bake it for 45 minutes. This is definately a keeper!!! Heck, I'm thinking of making a big bowl of the frosting and eating it with a spoon. :)

Cheesy Chicken and Potato Casserole

I found the instructions to be rather vague. I couldn't find scalloped potato mix alone so I had to buy the boxed w/potatoes. I followed the liquid measurements best I could since the ones on this recipe and the box didn't match. This was a disaster!!! It may have been my fault but I have made several casseroles that have turned out great. This is my first official "failure". We're having mac and cheese for dinner tonight. :)

Chicken and Biscuit Casserole

My family loved this dish!!! I even got my 17 month old to eat it. It was fairly easy to prepare. I strongly suggest anyone making a lot of casseroles think about buying a "V slicer" and a George Foreman grill. They make the preperation of casserole a breeze!! I will definately make this one again. My 12 year old stepson said," that chicken casserole thing you mad was really good!"....and he doesn't like peas.
