Crab Imperial II

I live on the Chesapeake Bay in rural Virginia, and this is the REAL DEAL. For Valentines' Day my husband and I decided to cook a decadent meal together, so we made steaks, sweet potato biscuits, sauteed spinach and this crab imperial. Not only was this absolutely heavenly, it was not even difficult for my husband to help prepare, and he is a kitchen novice!

Sweet Potato Biscuits

These make perfectly moist biscuits that BEG for cinnamon butter. I added a pinch of allspice and some cinnamon to the dough. Delicious!

Shannon's Smoky Macaroni and Cheese

DELECTABLE! I made this using whole wheat pasta, skim milk and 2% milk cheese (except the smoked Gouda). It still turned out incredibly rich and creamy. The only addition was 6 strips of crumbled, center cut bacon mixed in with the bread crumb topping. Everyone at my table raved over this mac and cheese.

Unbelievable Chicken

I was only able to marinate this for about five hours, and it was still delicious. The children loved it and my husband and I thought it had great flavor. I will definitely make this over and over again.

Marzetti® Hawaiian Slaw

This was a nice twist on classic cole slaw. I left out the raisins because my children aren't big fans, but otherwise followed the recipe. I served with grilled turkey burgers and sweet potato fries. Great on a summer day.

Thai Green Curry Chicken

I love curries, and I have made many. This one is the best I have ever made. I made two minor changes. First, I could not find fish sauce in my little town, so I just subbed extra soy sauce. Second, I added a sliced red bell pepper for color and taste. The chicken soaked in soy sauce and then coated in flour and stir fried was so tender and juicy. The curry was perfect... not too hot and not too mild. This will be on my regular rotation!

Easy Tilapia with Wine and Tomatoes

This was absolutely delicious as written, and pretty effortless. I had to wrap everything in several layers of foil to keep the wine from leaking out, but other than that, very easy and very tasty. I will definitely be making this again.

The Humble Shepherd

I cheated and used instant potatoes, and I added garlic to the meat mixture. I also used one packet of instant mushroom gravy and on packet of country gravy. My fiance and I REALLY liked it, and it was a quick easy, weeknight meal. It is also a great recipe to "play" with. You could make it southwest style by seasoning the meat with taco seasoning and using pepper jack cheese and corn instead of peas and carrots, for example. So overall, a great recipe, especially for busy weeknights.

Coconut Shrimp I

This was a great recipe. It's a little time consuming, but easy and delicious. I used extra large peeled and deveined frozen shrimps and pan fried them, and it worked well. I doubled the recipe to feed my family of 7 on a Friday night.

Grandmother's Bread Pudding

Wow! This was an AMAZING bread pudding. I followed the recipe very closely with two minor changes. 1. I didn't use raisins and 2. I used allspice in place of pumpkin pie spice. I served this at a party and it got rave reviews. The custard sauce is a must. I could eat a bowl of that stuff!

Chocolate Ganache

I did not use the rum, out of personal preference, but I may try that sometime too. This was simple, especially when I found bittersweet choc chips in the grocery store! Let it cool at room temp for about 45 minutes, then I poured it over Choc Lover's Cake from this site. This is DELICIOUS! May try again with the rum or rasberry extract. Also, made a beautiful satiny looking finish on my cake. Would be excellent as a dip for fruit as well.

Slow Cooker Creamed Spinach

This was really good spinach. The only thing I did differently than the recipe said, was I just mixed everything together inside the crock pot instead of mixing it in a bowl and dumping it in. Saved me a dish! I also lined my slow cooker with one of those slow cooker bags, so I had no mess. This was delicious and simple. Next time I may tweak the spices just for fun, to see what happens. I used light cottage cheese and american cheese, and next time I may use egg whites just to keep this dish low fat and not cancel out the health benefits of spinach. I served this it a birthday dinner with lots of family. Most of the kids wouldnt' try it because it had spinach in it, but a couple did and they were surprised that they liked it.

Chocolate Lovers' Favorite Cake

Moist, delicious, and not too difficult. The batter was thick, but it made a beautiful bundt cake. I used a ganache recipe from this site to make dark chocolate ganache, poured that over the top, then drizzled melted white chocolate over it. I served it for my boyfriend's birthday party, and he LOVED it.

One Bowl Chocolate Cake III

I made this cake last week for my daughter's birthday party. I doubled it to make a double layer 13X9 cake and it turned out beautifully. The cake was VERY simple... I usually have the ingredients on hand... and it stayed moist and yummy for the three days it took for us to eat it all up. I also took leftovers to work, and my boss had seconds he liked it so much. The batter is very thin... don't let that scare you. It comes out just right. This was literally easier than a boxed mix, and soooo much tastier!

Grilled Peanut Chicken

I was hoping for a little more from this recipe. I marinated the chicken in a watered down version of the sauce for several hours, then grilled with the sauce as directed. I made extra as several reviewers suggested, which was good. The chicken turned out dry and a little to crisp on the outside, but the sauce helped. My boyfriend who is a grill expert was in charge of grilling it, so I was surprised it didn't turn out wonderfully. We'll try this one again, because we liked the flavor, and maybe cook it over lower heat for longer.

Marinade for Chicken

This chicken came out very flavorful, but I expected it to be more moist than it actually was... not that it was dry. It marinated for approximately 5 hours.... next time I might try longer. It was also very easy and inexpensive to throw this together. Next time I might add honey to the marinade. We served this chicken with grilled corn on the cob, asian style cole slaw, macaroni and cheese (for the kids) and garlic dinner rolls.
