Oatmeal and Wheat Flour Blueberry Pancakes

Way too much milk. I add more flour & it was still too thin. Definitely not thick enough to hold blueberries. But the taste is great.

Whole Grain Waffles

This is our go to waffle recipe. I always use regular ww flour and I never have flax meal so I use 1/2 cup of rolled oats. I also double the sugar & add cinnamon and cardamom to the batter. Husband & kids live them!!

Banana Oat Muffins

These were great. Not too sweet so I was ok giving them to my toddlers. I subbed brown sugar for white & baked at 375 for 15 minutes. We will be making these often!

Little Meat Loaves

We love this recipe at our house but I do make some changes. I use half beef and half ground plain pork, not sausage. I also make the sauce with tomato sauce instead of ketchup. There is so much sugar in ketchup that I can't see using both it and sugar. The small loaves are great for storing leftovers!

Health Nut Blueberry Muffins

This was great. We do love fluffy blueberry muffins made with white flour and a streusel topping, but I wanted a healthier everyday muffin for my family. Followed the recipe pretty close but I did use 1/2 cup of brown sugar and 1/4 cup of white. I also increased the blueberries to 1 1/2 cups. This is definitely our new blueberry muffin recipe.

Strawberry Muffins

This recipe was so good the next day I made another batch with fresh strawberries and blueberries! Added vanilla and a little cinnamon. Trying this one again today and I'm going to do half whole wheat and half white flour with my same strawberry blueberry mix. I did add more berries than the recipe calls for. I always do!

Chocolate Chocolate Chip Cookies I

I followed the recipe closely. I did half brown and white sugar and left out the walnuts. These were good but cakey. I love chocolate cookies but its always hard to tell exactly when they are done because you can't see them brown. I will try these again and cook them less.

Best Chocolate Chip Cookies

These were great. I only made a half batch because I knew my husband and I would eat all of them in a day so I made less so we would eat less. I also made very large cookies because I only wanted to bake 1 batch. They looked way undercooked when I took them out but the bottoms were nice and brown so I knew they didn't need to go any longer. After cooling completely on the cooling rack they were perfect. Crispy on the outside & chewy in the middle. Bonus that they are made in 1 bowl!!

Best Brownies

I followed the recipe exactly but my square pan was dirty so I used a 9 inch round. These were amazing & fudgey!! We will never buy boxed brownies again. Oh, I didn't make the frosting. They didn't need it.

Split Pea Soup

This was a pretty good split pea soup. I didn't soak the peas because I forgot! but it turned out just fine. I used veggie stock instead of plain water, ony 1 onion, and 3 potatoes.

Zucchini Pasta II

I used this a just an idea to make dinner based on what I had in the house. I usually follow recipes to the T the first time I make them but I needed to use up some stuff in the fridge and pantry. Instead of pasta I used Isreali couscous, also used a mix of italian herbs, I mix of frozen veggies (that included zucchini), no chicken, and fresh red bell peppers that I sauteed with the onions and garlic. My family loved it and it was a great way to use up stuff in the house!

Baked Chicken Wings

Banana Cake II

This cake came out great. Fluffy, light, and moist. Filled a 9x13 pan almost to the top when baked. I did the sour cream milk mixture suggested by another reviewer and added mini chocolate chips. It did not need frosting at all. Super delicious all by itself!

Potato Leek Soup III

This is a winter staple at our house. I use half the butter and add a little olive oil as needed. I also had half of a large sweet onion, 4 carrots, and use 4 leeks. I used about 4-5 large potatoes and 8 cups of veggie stock. Lastly I use half & half instead of cream.

Best Big, Fat, Chewy Chocolate Chip Cookie

I just made these cookies (actually the last batch is still in the oven). I made the recipe almost how it is written. I did cut down white sugar to 1/4c and brown sugar to 3/4c & I only used 1c of chips since I was adding Heath and peanut butter chips. I divided to dough into two sections and added 1/2c of Heath Bar pieces to one half and 1/3c of peanut butter chips to the other half (in addition to the chocolate chips). I baked them for 12 minutes and let them sit on the pan for an additional 5 before moving to a cooling rack. I did refrigerate the dough for an hour before baking which may have helped them to not spread too much. Excellent recipe & I will definitely make again.

Easy Chicken Enchiladas

These were amazing. I only used 2 cups of mexi blend cheese total, corn tortillas, and topped it off with green enchilada sauce. I also sprinkled sliced olives on top when I melted the cheese. When I cooked my chicken I seasoned it with taco seasoning. My husband loved these!!

Alfredo Sauce

This was super easy and my husband and I loved it. I did double the recipe and added an extra clove of garlic. Fresh, real parmesan that I grated myself melted like butter and was very flavorful. Will positively make again and again.

Soy Milk Pancakes

These are the only pancakes that I make at my house anymore. I have probaby used this recipe more than 100 times. I do not add the almond extract, I use turbinado sugar (that's what I keep on hand), and I add cinnamon, nutmeg, and a dash of cloves. Even people who have never had soymilk before always love these pancakes. The soy milk gives them a nice nutty flavor.

Banana Blueberry Muffins

The only changes I made to this recipe were to add 1/2 cup of mashed blueberries in addition to the 1 cup of whole berries. I also doubled the cinnamon and added three dashes of nutmeg. Although these muffins were very moist (and beautiful) they did not have a lot of flavor. Even adding a big tab of butter to the center while they were hot did not do much to help them.
