Mushroom Blue Cheese Turkey Burgers

Made with beef, 1 cup of green onions instead of white, forgot soy sauce, salt and pepper and probably used a bit more cheese. Huband grilled them. Excellent!!!!

Cream of Tomato (Tofu)

I doubled the tomatoes and onion, cooked in garlic olive oil. I added 16 oz of soft tofu and a can of Progresso cream of tomato soup and mixed it all with an emulsion blender. The texture was weird so I put it in batches through a sieve. Then it was good! Thanks for the recipe.

Cabbage Cakes

I added caraway seeds as recomended, subbed lowfat cottage cheese for yogurt, doubled the eggs, and used 1/2 whole wheat and 1/2 rye bread crumbs. Really good. Kiddo is taking a few for her lunch today.

Indian Fish Curry

The house smelled wonderful! I used mahi mahi fillets. Scared it would be too hot, I used 1/2 tsp cayenne and 1/2 tsp. madras curry powder. Served with rice and steamed spinach.

Salmon Broccoli Bake

I used 2 small onions with cooking spray, buckwheat groats, southwestern egg beaters, canola mayo, fresh steamed broccoli and spinach - and lots of it, and left out the cheddar cheese. And I added chopped roasted red bell peppers to the salmon mixture. Made this in the morning and cooked for 45 minutes when I got home. My husband wanted more, but it was all gone between the 3 of us. YUM! I usually don't make things twice, but this is versitale to what you have on hand and easy - and very healthy too! Thanks a million!

Tomato-Topped Cod

I used tilapia fillets, canned drained Italian tomatoes, red instead of green pepper, and panko instead of seasoned bread crumbs. Before I put on the crumb topping, which I used olive oil, I drizzled balsamic vinegar over the fish and veggies. My family loved this! Thanks!

Scalloped Cabbage with Fennel and Cranberries

So good! Didn't have a bulb of fennel, so I used 5 stalks of celery. Also used fresh cranberries and didn't have the cranberry juice, so I used extra broth (homemade turkey broth). The fennel seeds went great with this. I will make this again!

Easy and good. I put cabbage in the bottom of the dish and seasoned everything w/ garlic powder and paprika. I had to go to church and my husband didn't turn it down for the last 30 minutes, but it was still great!

Spicy African Yam Soup

I changed this to our likings and what I had on hand and it came out great! I used 1/2 a yellow onion and about 1/2 cup chopped green onions, 3 heeping Tbsp of chopped garlic, one large and one small sweet potato, leftover black-eyed peas from New Year's Day w/ the seasonings and juice...about 2 cups, basil instead of thyme plus extra and extra cumin, 2 cubed smoked chicken breast, frozen broccoli and different peppers, and extra natural peanut butter. My husband loved this and kept saying how lucky he and my daughter are to have such a good cook in the house and that it was the most flavorful soup! Sooo goood!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I used the light boursin and low sodium chicken broth (about 1/4cup less than what it called for, but I wish I had only put in about 1/2cup altogether) w/ baby portobello mushrooms, and whole wheat penne pasta. Even my mushroom hating daughter liked this dish.

Fresh Asparagus and Chicken Casserole

I left out the oil (used Pam), added tons of seasonings (garlic powder, paprika, basil, and chopped garlic), left out the oregeno, subbed cr of chicken for chicken broth and used less sour cream, subbed lowfat mont jack for parm. My daughter and husband loved this dinner served w/ spinach salad.

Broccoli Beef II

I cooked the meat in the crock pot in the marinade which made it turn out like roast, but I drained it and then made the marinade again (minus the Itailian dressing and using refridgerated ginger) and threw in lightly steamed broccoli and let it all mix together. My daughter loved it. My husband and I added sweet chili sauce and it was good. I didn't have noodles so I served it w/ brown rice.

Bacon and Tomato Cups

I used thawed frozen biscuits and cut them in half. I think I should have peeled that part in half too because these puffed up too much and made it where there wasn't enough filling. Other than that, it tastes great!

Tasty Spinach Treats

I put these in wonton wrappers, and I'm glad I did. I made other apps w/ bisuits and they were too big and not enough filling once they were cooked. I made these stuffed and in mini cups, both were good. I used monteray jack cheese. I couldn't taste the nutmeg, but maybe I didn't add enough (I never measure anything).

High Temperature Eye-of-Round Roast

This is great...so easy! I would like my roast a little more pink. Mine came out medium-medium well. If anyone could say to do less cooking time or take it out of the oven sooner than 2 1/2 hours? I will be making this easy roast again!

Seafood Chowder

This tastes rich, I feel guilty eating it. I subed green onions for sauted yellow and canned corn for frozen. I added white wine and more milk than called for and I only used shrimp. This is easy and good!
