Blue Cheese Herb Spread

Loved it. My book club friends raved. You can also experiment with different herbs and cheeses.. like feta, or goat, with rosemary, or basil.. the possibilities are endless.

Raspberry Oat Bars

These are fantastic. I just froze a batch for a beach trip next week. These are buttery and wonderful. Use any jelly you want... I used smuckers "simply fruit". You could also add some crunched up toasted almonds to the batter too. YUM.

Cranberry Orange Bread

I liked this bread, the orange flavor was wonderful.. but I felt it was a little dry. I used more butter than called for, and I think I might use even more next time. I was a little crumbly. More butter would probably make it more moist. Or maybe even sour cream.

Baked Potato Soup V

I made so many changes to this recipe, that it's hard for me to rate the original one. I thought the original recipe would lack in flavor and there were too many potatos. Here is what I did. I used 3 large potatoes, I blanched them until they were half cooked, then cubed them.. so they would cook the rest of the way in the liquid. I used 3 cups of milk, and between 1-2 cups chicken broth. Milk alone would be too bland. I cooked one small yellow onion in the butter before adding liquids. I only used a few tbsps of butter. I used at least 1/2 tsp salt and 1/4 tsp pepper, I kept tasting it and adding more. I stirred a few tbsps only of sour cream in at the end, and I think the bacon gives great flavor. My batch made enough for 4-6 dinner sized servings. This recipe has potential, but I did a lot of tweaking.

Chicken Avocado Pizza

This was very very good. I did make a few changes. I added a small clove of garlic to the advocado mixture. I also had some bacon bits on hand, so I put them on the pizza. I also chopped up some roasted red pepper to add. I think without the pepper, it might not have been as flavorful, thus the 4 stars I gave it. I also used a full pizza crust (whole wheat) and cooked it in the oven instead of the broiler. It was awesome. Thanks for the idea. Really, you've inspired me, I am going to try a lot of new pizza ideas this way. Thanks!

Individual Baked Eggs

Made these over the weekend for my parents while they visited, and they were great. Cooked them a little longer for desired doneness, but that's up to the cook. I also cooked mine in a water bath (placed the muffin pan in a larger pan with some water in the bottom) I also cheated and used pre-cooked bacon, making the cleanup a snap. Served over toasted whole grain english muffins. The possiblities are endless with this.. do these with canadian bacon and hollaidaise sauce for easy eggs benedict.. or serve over sauteed spinach. Put sauteed green pepper and onion in the cups prior to breaking the eggs in. I can't wait to experiment with these.

Asian Beef Skewers

This was WONDERFUL. The only change I made was dried ginger instead of fresh, I didn't have fresh.. but I don't think it mattered. This marinade would be good on chicken and shrimp, even salmon. YUMMMMMM... My husband raved. Can't wait to dig into the leftovers tomorrow for lunch.

Classic Bran Muffins

I thought these were good. A little crumbly after a few days, but tasty and healthy. I used a splenda/brown sugar blend for the sugar and canola oil instead of veg oil. I also used frozen blueberries in place of the raisins, but any fruit would do. These are very versitle and a good healthy snack.

Bodacious Broccoli Salad

I thought this was good. I halfed the recipe and messed up and put in too much onion, but that wasn't the recipe's fault. I also used low fat mayo and cut the bacon back a bit and I thought it was good.

Cajun Seafood Pasta

This was really good. I made a few changes, since we are dieting. I used fat free half and half, dried Thyme, low fat parmesan, lower fat mozzerella instead of swiss, and whole wheat pasta. I cut down on the pepper and salt (as parmesan cheese is very salty, I felt the amount listed was way too much). I just did pepper(s) and salt to taste right at the end. My husband liked it a lot.

Awesome and Easy Creamy Corn Casserole

EXCELLENT. I made this with some baked chicken and even my picky toddler liked it. I only had to bake it for 40 minutes, but I have a really hot gas oven. I personally think that cheese would ruin the sweetness of the dish. But you could experiment.. with jalepenos or green chiles and cheese for a more savory flavor.. I did not add additional sugar, my cornbread mix was sweet enough. I also used lowfat sour cream.

Quick and Easy Shrimp Fajitas

I thought this was a quick, easy meal. I marinated my shrimp in lime juice and zest and didn't use the whole faijita seasioning packet. I might use individual seasonings next time rather than the packet.

Anaheim Fish Tacos

I thought this was excellent. I used tilapia, onion instead of the leek, jalepeno peppers. I even used whole wheat tortillas, and it was so so good. This is healthy, fast and delish. I topped mine with a little cheese, advocados, and sour cream (light). Don't skimp on fresh lime juice, you can really taste it!

Divine Spaghetti Sauce

I just tasted after about 5 hours of cooking in a slow cooker, and OH, is that some good sauce. I did make a few changes. I used ground turkey breast instead of beef. I used one 28oz can of diced tomatoes, Italian style, one 28oz can of tomato sauce, and only one can of paste. I also used one green pepper, eliminated the celery, all my herbs were dry (used 2tbsps italian seas, 3/4 tbsp basil, a dash of red pepper, a little salt and ground pepper, a tbsp sugar, and 2 dry bay leaves). Fresh would have been better, I just didn't have fresh. This is a great base sauce, you can add or subtract the seasonings to your taste. I Love it!

Mary's Meatloaf

This was EXCELLENT. I don't even like meatloaf and I loved this. My huband ate it up....2 big helpings. I didn't cook it for 2 hours, I have a VERY hot oven, so I only cooked it for a little over an hour. If I had gone 2 hours, it would have been dry. I also waited 30 minutes, then put the glaze on, to reduce burning. I used Splenda brown sugar blend to reduce calories, and it was great. Highly recommend this one.

Apple Pie by Grandma Ople

AWESOME... the best looking apple pie I've ever made. My family loved it at Thanksgiving. I also tossed the apples in the caramel mixture BEFORE putting it in the crust. I also used a full top crust rather than lattice, then brushed the top with a few tablespoons of reserved caramel. I cheated and used premade crusts. Definately put some foil on a cookie sheet under the pie. It will leak, but it's worth it. YUM.

Artichoke Chicken

This was just okay, it's missing something.. and I can't figure out what. Maybe it needs some fresh sauteed garlic.. or the chicken to be marinated in an olive oil based marinade, like italian dressing.. I am going to experiment because I think the concept is great.. just needs some tweaking. The chicken was tender.. just needs more flavor.

Apple Pecan Corn Bread Dressing

VEry good. I added a little low sodium chicken broth, to make it moister, and I also dotted butter on the top, to make the top crisp. I made it for my father in law that has to watch his salt, and with the apple juice rather than chicken broth, it was a good recipe. I will make it again.
