Fire-Roasted Tomato and Spinach Pasta

I really liked this recipe. It's really fast and easy to make, and full of really nutritious food. Plus, it's flavorful even without the salt and pepper. I was afraid that my picky eater husband wouldn't like it as-is, so I added a touch of crushed red pepper flakes just to give it a spicy kick. We also sprinkled parmesan cheese on top. But I really think that this recipe stands on its own - it just allows for doctoring according to your own tastes. I made it with fresh spinach rather than creamed, and I think the author was right in making this change!

Lemon Chicken and Rice

Nice, simple, easy, quick meal. Hubby got a little tired of it toward the end, but I thought it was fine. Not nearly as lemony as I expected -- not in a bad way, just not a strong lemon flavor.

Kielbasa with Peppers and Potatoes

This will probably become a staple at our house. It's easy and flavorful. I added 3 cloves of minced garlic and a sprinkle of onion powder. Chopped onion would be good in it, too.

Garlic Potatoes and Ham

Nice, simple, and easy to make. Good comfort food for a cold winter day. The soup mix made the dish saltier than I prefer, and the hubby thought it was just OK. But we'll definitely make this one again; it's a nice break from what we normally eat (i.e. chicken, chicken, and more chicken!)

Chicken Breasts with Balsamic Vinegar and Garlic

Take my rating with a grain of salt: my hubby doesn't like balsamic vinegar in general, so his personal taste affects my end choice! I thought it was really yummy, though I diluted the sauce with more chicken broth because the b.v. was a tad too intense for me. Just as a note to myself, my hubby said he would eat this again when we're feeling stuck in a rut and want something different.

Wow, this was so tasty! Thanks to 1. the reviewers who recommended spraying the parchment paper with non-stick spray, 2. the reviewer who emphasized the importance of beating the eggs enough, 3. the reviewer who suggested rolling out gumdrops to make holly leaves, and 4. the reviewer who suggested using a fork to make lines that looked like tree bark. My bûche turned out like a work of art! And did I mention it was really tasty? Wow!!

Broiler Casserole

As a casserole, this isn't much of a dinner. I think it makes a lot more sense as a doctored-up sauce for pasta. I also added cheese, and probably should have added breadcrumbs to make the whole thing "stick together" like a casserole. So, over noodles, it's a good way to get more veggies in your diet.

I really liked this recipe. It's a nice break from the typical dinner because the taste is quite different. Next time I make it, I'm going to add more cumin, cayenne, and pepper because I thought it was a little bit bland as-is.

Quick and Easy Chicken

This was pretty good. I scaled the recipe down for two people, but ended up needing to make enough sauce for four people in order to have enough to simmer. Next time I make it, I'll probably substitute Worchestershire sauce for the soy sauce, which will essentially make it a BBQ chicken recipe.

Lamb Ribs with Honey and Wine

We accidentally bought the wrong cut of meat (we live in France and what I wanted got lost in translation!), so the lamb chops were a little bit tough. Not bad, though. I'm eager to try it with ribs instead. I'm not really sure why honey is listed in the recipe title, though - we could hardly taste it. Nonetheless, it's a keeper.

Garlic Chive Chicken

I just made this for the second time, using the 4 person recipe. It turned out MUCH better using the original quantities than scaling down. If you're cooking for two, just make fewer noodles and only cook 2 chicken breasts. I wish I had taken a picture before we ate because it was really pretty this time, too. Just make sure to plan ahead for the 30 minutes to roast the garlic! Otherwise, the recipe doesn't take long to make at all.

Pork Normandy

I really liked this. I was halfway through making it when I realized that I needed a blender (which I don't have), so I didn't puree the onions and apples. I actually prefer it this way, I think, because I like having the pieces to eat along with the pork. The sauce doesn't really get thick, though. It does *thicken* but it's not a thick sauce. Still, very yummy. I'll definitely make it again.
