Ten Minute Enchilada Sauce

Great base recipe, but way too much oil. There's no need for 1/4 cup of vegetable oil. I only used about 1 tablespoon of olive oil and it was just fine. I also used a large can of tomato sauce instead if the 8oz and I think it turned out great. I added extra spices -- salt, additional chili powder, liquid smoke, chipotle chili powder, etc., and let it simmer for about 30 minutes. I'll make this again!

Oven-Roasted Asparagus

Simple and fantastic recipe. I like to trim the stalks, then peel the lower half of the stalk with a vegetable peeler to reduce the toughness of the asparagus. I had thicker asparagus from Costco, baked for 8 minutes and it was perfectly cooked -- any longer and they would have been way too done. Don't leave out the lemon juice -- it really brings out the garlic/parmesan flavor. Thanks for a great recipe!

Smashed Cauliflower

Very good with the reduction of the broth to 1.5 cups. Be careful with the liquid, as it will turn mushy very fast. I served this with the Creamy Chipotle Chicken slow cooker recipe from this site and it was a nice low-carb meal. Thanks for sharing!

Creamy Chipotle Chicken

This is a fantastic dish. I slow-cooked frozen chicken breasts on high for 2 hours, low for 2 hours, and it turned out amazing. I didn't have cream of chicken, but substituted jarred Alfredo sauce for the cream base. The chipotle flavor with the cream is wonderful! I also added a couple tablespoons of mild green chiles and served with cauliflower 'potatoes' from this site for a nice low-carb comfort food meal. Thanks for sharing this great recipe!

Party-Size Greek Couscous Salad

This was a GREAT couscous recipe. I didn't have olives, so those were sadly omitted, but I didn't miss them at all. Also used a Champagne vinaigrette instead of the Greek, and scaled the recipe down to just 1 box of couscous since I was only cooking for 2. As the recipe owner suggests, this is easily adaptable. Overall, a fantastic recipe that I will be holding onto! Thank you!

Beer Margaritas

The easiest, best margarita recipe EVER. I don't like it very sweet, so I cut back on the limeade and add more water (or tequila!). You can also use many types of frozen juice concentrate to shake things up a bit. SO easy to make for a party -- pour everything in a pitcher and serve!

Mexican Bean Salad

This was a great recipe. I omitted the green pepper (personal preference) and cut back a bit on the sugar, as other reviewers suggested. Also added a bit more cilantro. Nice fresh flavor, and even better the next day. Thanks!

Cheese Enchiladas

This was a great recipe with a few modifications recommended in the reviews. I replaced the tomato paste and tomato sauce with a can of enchilada sauce, substituted 1/2 packet of taco seasoning for the Creole seasoning, and doubled the cheese. To prevent the tortillas from sticking to the pan, I poured a thin layer of enchilada sauce on the bottom. Also added a can of diced green chiles and sauteed the onions before adding to the filling. Soaking the corn tortillas in the enchilada sauce before rolling them is KEY. I also added sliced green onions on top for color. This is a great base recipe -- add anything you like! Thanks for sharing.

Sweet Restaurant Slaw

This was outstanding. I cut way back on the sugar (about 1/4 cup), used regular mayo, celery seed in place of the poppy seeds, rice wine vinegar instead of the regular white vinegar, and added grated carrot (personal preferences). This is definitely a keeper -- very good!

Hot Spiked Cider

We were looking for a winter drink without the heaviness of the milk and cream hot toddies, and this was a hit! We thought it needed a bit more kick, so we added 6 cloves, lemon zest, and orange zest to a tea steeper and let it marinade. Also added a bit of of cinnamon and nutmeg, and since we like scotch, added about a cup of that, balanced out with a bit more apple cider. We also left out the butter, though I'm sure it would be a nice addition. Thanks for sharing -- this was the perfect winter warmer while we went with friends in search of the perfect Christmas tree!

Great recipe -- loved the chunkiness of this raita. I opted for 2 cups of yogurt instead of the yogurt/sour cream mixture, omitted the garlic, and added cilantro. It turned out great! A nice side for any spicy dish. Thanks for sharing!

Chicken Tikka Masala

This recipe is amazing! I omitted the salt as other reviewers suggested, and grilled a few vegetables to add to the simmer sauce (red bell peppers, sweet onions, and mushrooms). The yogurt marinade makes the chicken so tender! I served this over basmati rice (I would definitely recommend doubling the tomato and cream sauce if serving with rice) and added Raita on the side (recipe from this site) -- SO GOOD -- and even better the next day. Thanks for sharing!
