Spanish Rice Original

This is a good recipe if you want something basic, but it needs some jazzing up. I omitted half the onions (they were pretty big), green bell pepper, corn, and olives out of personal preference. Added one diced and seeded jalapeno pepper (could have gone for two), 3-4 T chili powder, and about 1 t powdered garlic. To make it a complete meal, I browned 1 lb ground beef with the onions, rice, and jalapeno pepper. I agree with other reviewers that the rice could use a little more liquid, as the rice was a bit on the firm side. 3 starts without changes, 4 stars after making some adjustments. Vegetarian Kale Soup

Good as is; fantastic with 1 1/2 t chili powder blend from Spice Hunters (a mix of chili powder, onion powder, garlic, cocoa, oregano, red pepper, cumin, cinnamon, and cloves). I made this with chicken broth instead of vegetable buillion and yukon golds instead of white potatoes (skin left on) because that's what I had on hand. Cooked up in about 15-20 mins. I never thought I liked kale until I tried this soup. Thanks so much for the recipe!

Ginger Snap Cookies

I will never use another ginger snap recipe ever again!! I think I made my cookies a little larger than I needed to, so I increased the baking time by two minutes. Otherwise, I followed the recipe exactly. Thank you!

Soba with Toasted Sesame Seed Sauce

Sesame seeds are overpowering. I'd suggest cutting the called for amount in half or even by a quarter. I also thought the sauce was missing something I can't put my finger on... ginger, maybe?

Quinoa Tabbouleh

Fresh Vegetable Soup

Although this is a nice, straight-forward, easy to make recipe, it really needs a boost. I noticed that most people who gave this recipe a high rating also modified it and added seasoning. In mine, I added Worcestershire sauce, a pinch of red pepper flakes, tomato paste, herbamare, and extra garlic at the end. I also used only 1/2 head of cabbage because it wouldn't fit in the pot I was using and added canned corn, which added some sweetness. With these modifications included, I'd probably rate in 3 1/2 - 4 stars.

Easy Apple Crisp

This recipe was disappointing. The only good thing about it was the substitution of spice cake mix for white. Otherwise, it was time-consuming and not worth it. The topping was flavorful, but the apples themselves were bland. I didn't take the time to peel the apples, but it wouldn't have been worth the effort if I had. Next time I make apple crisp, I'll use canned apple filling instead.

Chocolate Chip Banana Bread II

I must say, this was a fantastic recipe, with one minor setback: it's actually a little TOO moist... and when I say that, I mean that the outside browned nicely, but the very middle of the loaf turned out almost wet. Next time I'll cut out a banana or 2, or maybe consider turning the temp down to 325 and adding some of the baking time. Otherwise, very very tasty and rich. I added 1 t vanilla, 1/2 t cinnamon, and 1/2 t nutmeg to suit my tastes.

The Best Vegetarian Chili in the World

My husband is a meat-lover and doesn't usually like chili, but he loved this recipe! The only thing I changed was adding more spices. I seeded the jalepeno, so maybe that was my problem. I added more chili powder and cumin, and sprinkled some cayenne in as well. Delicious!

Bran Flax Muffins

I've made these twice. The first time I made it exactly as the recipe stated. Very good, but a 4 star. Second time, I made some adjustments, and they're amazing. Used currants instead of raisins (a lot less overpowering), chocolate chips instead of nuts. Added 1 t orange zest (made all the difference!). As a shortcut, I stuck the carrots and the apples (skin and all) into a food processor and coarsely shredded them. Also, used 1 1/2 c Red Mill High Fiber Hot Cereal with Flax Seed instead of the oat bran/flax seed. Much quicker!

Coffee Liqueur Bread Pudding with Caramel Sauce

I followed this recipe pretty closely, except I used 3/4 C coffee liqueur instead of 1 C, but it was still too much. Next time, I'll use 1/2 C as suggested by others. I also put the cinnamon and sugar mixture into the egg mixture instead of sprinkling it on top. Cut the coffee liqueur in half, and this recipe is great with a scoop of vanilla icecream and a cup of coffee!

Not Red Spaghetti Sauce

Delicious! I did make some changes based on some reviews, however. I only used 1/2 lb. sausage and 1 bullion cube, but doubled the mushrooms. Oh, and I also cut down the butter quite a bit to reduce the fat. One thing I'll do different next time is cube the zuccinni; I cut them into strips this time, and I thought they were a little too chunky. Definitely a keeper!

Chicken Pelau

This was ok. It was easy, but I'll make some changes next time. First of all, I thought the recipe called for too much curry. Secondly, I think it needs something sweet in it to lighten the curry a bit. Maybe coconut milk. I'd say this is an easy recipe with potential.
