Fantastic Lemon Butter Fillet

Reviewed: Jul. 27, 2013
Used advice from another reviewer and topped it over a bunch of spinach in a glass 9x13. Also sprinkled a little bread crumbs over the fish. Used 1/2 tsp of salt and pepper and omitted the lemon pepper. Used salted butter. Cooked for 15 minutes at 350 degrees (convection) and uncovered for another 15 minutes. Once cooked I actually plated the fish and cooked spinach over a bed of raw spinach while my family had it over rice. YummmY! My husband said the he could eat this everyday!

Yum! Actually used leftover rotisserie chicken and came out delicious. Super simple. Left off crushed croutons.

D's Famous Salsa

Reviewed: Jun. 1, 2013
Love it when I don't have fresh tomatoes in the house or when I only have a few (then I just add a mix of stewed tomatoes and fresh)

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo)

Reviewed: Feb. 6, 2013
I did improvise a bit because I wasn't prepared with all the ingredients. I didn't have enough tomatoes so I threw in a can of blended stewed tomatoes. I didn't have a red onion so I used a white onion and 2 minced garlic cloves. My family doesn't like things spicy so I just used a half a jalepeno with the seeds removed. Even with all that improvising it came out wonderfully! Can't wait to try the recipe again, the way it was written.

Fluffy Pancakes

Reviewed: Jan. 26, 2013
Love these pancakes! We put the dry ingredients together and leave it in the freezer to save some time. We have also substituted with soy milk and almond milk. I add some vanilla as well.

Just the right amount to satisfy a craving. I use garlic flavored olive oil instead. I can't make them fast enough for my kids!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Reviewed: Apr. 20, 2010
Loved this recipe. My kids each wanted multiple helpings. It was nice because I have one that is allergic to milk and butter and I didn't have to worry about changing the recipe to accomodate for her allergy! I did add about a half a cup more of fresh strawberries and about a half tsp of salt.

Pecan Pie V

Reviewed: Nov. 26, 2009
Loved this pie! Used Nucoa for the butter and vanilla soy milk for the milk (my daughter is allergic to milk and butter). I toasted the pecans and it came out tasting wonderful! There wasn't a crumb left. It was a bit flaky on the top, but it was delish!

Basic Chicken Stock

This was wonderful. My daughter is allergic to milk and most chicken broth has milk in it. It will be making this often to freeze and store!

Lime Fish Tacos

Reviewed: Jul. 25, 2009
These are great! I did double the sauce (but not the lime) and it was perfect for the tacos. Next time I will try it with some cilantro and maybe some guacamole! Even my 2 yr old twins gobbled them down.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Jun. 21, 2009
I added some vanilla and cinnamon for flavor, but it was still a little bland. I substituted applesauce for the olive oil. I guess I didn't wait long enough before I flipped the first ones and they fell apart. Once I waited a little longer for them to cook, they came out perfectly.

Fish Tacos

Reviewed: Mar. 3, 2009
So yummy! I left out the capers (we didn't have any more) and only had about 3/4 of a lime left. I put in 1/4 tsp of cayenne (we don't like spicy) and it was delicious. Next time I will try grilling the fish for a healthier alternative. I also was thinking it might not be bad with shrimp or fish sticks (for the kids).

Emma's Belgian Waffles

Reviewed: Jan. 22, 2009
So yummy, I won't be ordering belgian waffles at the restaurants any more. I did substitute milk for soy (my daughter is allergic) and used Nucoa margarine in place of butter. I also used 4 tbsp sugar and it all tasted yummy! Thank you for the recipe!

Grilled Mustard Potato Salad

Reviewed: Jan. 7, 2009
Had a great flavor to it. We used garlic salt in place of celery and used olive oil instead of canola. I also grilled in on our indoor griddle and it came out great. I want to try it on our BBQ to see if it makes a difference!

Stuffed Mushrooms I

Reviewed: Dec. 29, 2008
These were great! I took the advice of another reviewer and cooked the mushrooms first to get out some of the moisture. Then stuffed them. I used real garlic instead of garlic powder. Put a little parmesean on top and popped it into the oven. They got rave reviews from everyone. We even had enough for dip on the side. We ate them with cut up veggies and some veggie chips.

Rotini Pasta Bake

Reviewed: Dec. 17, 2008
Quick and easy, my family really enjoyed it! I actually used the Spaghetti Sauce III recipe (didn't have canned sauce) that I tweaked a bit and just mixed it all together with the pasta. Baked it for 20 minutes then mixed in cheese to 1/2 of it (one of my daughters is allergic) and back in the oven for 5 more minutes. Absolutely delicious! The kids loved it! Next time I will make some garlic bread with it.

Spaghetti Sauce III

Reviewed: Dec. 17, 2008
This was the first time I had made my own spaghetti sauce. It was so quick and easy, and tasted so good. I did use some garlic instead of onions (my husband doesn't like onions) and substituted all the spices with a few tbsp of italian seasoning. It came out wonderfully!

Pumpkin Flax Quickbread

Reviewed: Nov. 20, 2008
Absolutely loved the recipe! My daughter is allergic to milk and this was a hit for everyone! We have made the recipe many times already. I did use 1 c whole wheat flour (not pastry) and 2/3 all purpose. The first time I tried it with 1 cup sugar and the second time I tried it with 3/4 cup brown sugar instead. Each was equally good! We enjoyed them as muffins better in our family (4 yr old and 2-1 yr olds). My husband enjoyed it when I split the recipe and put chocolate chips in half of them!
