Cowboy Oatmeal Cookies

Holy mackerel! These are fantastic! I love oatmeal cookies and was looking for a change from the regular variety. Per other reviewers I cut the sugar (2/3 c white and 3/4 c brown), added a splash of vanilla and 3/4 c or so of chopped pecans. Also, I don't have anything but real butter in my house so I used that instead of margarine. I am blown away! Will make again and again!

Figs with Goat Cheese, Pecans and Bacon

I have to say, for how excited I was to make these, they were one of the more disappointing things I've ever tried. For one thing, they took nearly 20 minutes and still came out half burnt and half rubber, even rotating the pan AND the figs. Apparently if you use half decent bacon this recipe doesn't work? There was no clear definition of flavors; you couldn't taste anything, it was just muddy. I have made a similar app using sliced grilled brats in place of the bacon, finishing the whole thing on the grill, and it comes out fantastic. I will definitely be going back to that recipe.

Wonderful! I made it exactly as written except instead of only 2T of shallots I used half an onion minced. We like onion and I think it gave it more texture. Will make again!

Cornbread Muffins I

Loved these! I'm a big fan of whole corn in cornbread and these didn't disappoint. I was looking for a cakier texture so substituted vegetable oil for the butter and they came out very moist and tender. I didn't find them too sweet at all. One thing though, I'll make sure to fill the muffin cups almost all the way to the top next time. I filled to the standard 2/3 and ended up needing 4 extra muffin cups, but these don't rise a ton. In any event, these will definitely be joining my go-to recipes and I'm looking forward to playing around with add-ins. Maybe shredded cheese next time?

Spicy Garlic Lime Chicken

This was a great recipe. I only used two chicken breasts and still didn't have an excess of sauce, but it was very tasty. It didn't knock my socks off, but I will be making it again. Thanks!

Tangy Slow Cooker Pork Roast

This was great! The pork was fall-apart tender after about 7 hours on low. I played with the sauce ingredients a bit, however. Instead of ketchup I just used tomato paste, because I had a can of it open that I needed to use up. I also added Worcestershire because in my experience it makes everything better! After the pork was cooked I took it out and stirred about a half cup of light roux and a Tbsp of heavy cream into the thin sauce and ended up with a fantastic gravy to spoon over our rice. Will make again!

Festive Turkey Meatballs

I'm giving this 4 out of 5 because while the meatballs were terrific, I had to tweak them a bit and the sauce was kind of awful. I used a pound and a half of turkey because that's how it came packaged and as such had to add an extra 1/4 c of breadcrumbs and one more egg so that the meatballs would form up. I also added a bit of cayenne and some mustard powder. The sauce was way, way, WAY too sweet. In the future I would cut the honey in half and replace it with a soy/Worcestershire mixture to give it more depth of flavor.

Fruit Pizza II

This came out fairly well but I don't know if I'll make it again. It was tasty but the glaze was kind of... unattractive. Very opaque and gloopy. I had a hard time getting an even layer as I was spooning it over. I might try it again and just skip the glaze.

Irresistible Pecan Pie

Made this for Thanksgiving with my boyfriend's family and it was divine! Per other reviewers I added a tablespoon of flour to the corn syrup mixture and omitted the bottom layer of pecans, just to try things out. It was great! Will be making again and again.

Chicken Alfredo with Fettuccini Noodles

This was a good starter dish. We followed the recipe fairly closely, only added some mushrooms and broccoli for texture and to add some oomf. It was alright. We had a TON of sauce left over though and decided to use it to stuff jumbo shells the next day. With some tomatoes, salt & pepper and fresh basil stirred it it made FANTASTIC filling for the shells. We cooked the shells, stuffed them with the sauce, topped them with cheese and stuck them under the broiler for a few minutes. Superb! We'll be making this sauce again, just with the additions of mushrooms, broccoli, tomatoes, chopped fresh basil & pepper, and all of it mushed into jumbo shells instead of topping fettuccini. So that's why only 3 stars, way too many modifications to make it yummy.

Chicago Dip

Nice starter recipe. I would have given it 5 stars but I made a few changes: since it came out a little bland I minced in a couple of cloves of garlic and a dash of hot sauce for zip, and to counter the lack of texture I chopped up half a can of water chestnuts to add crunch here and there. It went over great at my holiday party!

Bacon Wrapped Smokies

I make this for parties all the time and people always ask for the recipe. I have changed the prep slightly the more I've made it however: I only use thick sliced bacon since it seems to hold up better, and I dredge the bacon in the brown sugar before I wrap everything together so the flavors can mingle more. Also, I bake them for 30 minutes at 375 since I like really crispy bacon. Overall a very quick and delicious appetizer!

Simple Salmon Chowder II

I was actually really surprised by how much I liked this recipe! I've never tried to make a fish soup before and was very pleased with the results. Using the mix is a great idea, however, I think it does make the soup a bit too salty, I think next time I'll use less of it and more fresh herbs. Overall good though! Will make again.

Sweet Potato Balls

The flavor of all the ingredients together was pretty good, but I must have done something wrong in the execution - they did not turn out well at all. Maybe to me the wording was ambiguous, but I rolled the potato mixture around the marshmallows and then rolled them in cornflakes. When they baked, the marshmallows melted and I was left with flat sticky chewy lumps. They tasted alright, but looked hideous and were hard to eat.

This was wonderful! Unfortunately, I only realized after I started that my food processor didn't work so I had to chop everything by hand. The flavor was delicious though, and I think I liked the more robust texture better in the end anyway. Served with toast rounds as a thanksgiving appetizer.

Easy Tilapia

Delicious! I was really happy with the way this one turned out. I did make one addition however: at the very end I threw in a handful of feta cheese to the sauce to help thicken it and add a little more zip. Also, next time I might use halibut instead of tilapia as I was only able to find previously frozen fillets and they were not so good... I think it would be great with either though! Thanks for the awesome recipe!
