The Best Rolled Sugar Cookies

The name says it all. These are the best sugar cookies. I like to divide my dough in half and roll it out one portion at a time while the other half is still chilling in the fridge. It makes it easier to work with. I yield around 32 cookies and that's rolling my dough to 1/2 inch thick. I like my cookies to be thick, soft and chewy and 1/2 inch thickness is perfect. Thanks Jill, these are wonderful.

I love to make these for social get togethers. I also like to change up the flavor with almond or vanilla instead of the orange liquer. They're so easy to make and they really make a nice presentation when you pipe the filling in and dust with a bit of cocoa or a sprinkle of chopped nuts.

Angela's Awesome Enchiladas

My husband isn't a big Mexican food fan but he LOVES this dish. I make this about twice a month / every two weeks. I do poach and shred my chicken in advance. It helps cut the time in half. Of course I do use low-fat sour cream and lite butter. I try to cut the fat down wherever I can. I serve with Mexican rice and refried beans. Thanks for this wonderful recipe!

Toscana Soup

This soup is alot like a certain chain restaurant. It's a great way to use kale. I do, however, use fat free evaporated milk instead of the heavy cream. I also use smoked turkey sausage instead of pork. I do like my soup a little thick so I add about 2 T. of cornstarch with 4 T. water and add it to the broth to thicken. My little girl even likes this one.
