Catherine's Spicy Chicken Soup

I make soup or stew for my darling daughter at least once a week and this recipe ranks top of her list. Here's the changes I've made to suit my 20 month olds taste. I use ground chicken, reduce the garlic to 1 clove and use low fat sour cream. I omit the tomato soup altogether.

Strawberry Angel Food Dessert

Yummy! This is a lovely dessert. I did use only 1 cream cheese and it was low fat along with fat free Cool Whip. I also like to make my own strawberry glaze with jello, sugar and cornstarch. There is a recipe posted for the glaze on this site. You'll won't regret making your own glaze, it's so much better than pre-made from the grocers.

Mom's Best Macaroni Salad

Really good. I did omit the added sugar because the sweet milk was plenty sweet enough and I also added a cup of water to make it creamy. You could add milk but that's just adding calories and fat. Once the salad cools, it may thicken, I add more water to thin the sauce. This is the only macaroni salad recipe I use. Thanks!

The Best Rolled Sugar Cookies

The name says it all. These are the best sugar cookies. I like to divide my dough in half and roll it out one portion at a time while the other half is still chilling in the fridge. It makes it easier to work with. I yield around 32 cookies and that's rolling my dough to 1/2 inch thick. I like my cookies to be thick, soft and chewy and 1/2 inch thickness is perfect. Thanks Jill, these are wonderful.

Stuffed Strawberries

I love to make these for social get togethers. I also like to change up the flavor with almond or vanilla instead of the orange liquer. They're so easy to make and they really make a nice presentation when you pipe the filling in and dust with a bit of cocoa or a sprinkle of chopped nuts.

Toscana Soup

This soup is alot like a certain chain restaurant. It's a great way to use kale. I do, however, use fat free evaporated milk instead of the heavy cream. I also use smoked turkey sausage instead of pork. I do like my soup a little thick so I add about 2 T. of cornstarch with 4 T. water and add it to the broth to thicken. My little girl even likes this one.

Corn and Zucchini Melody

This recipe is absolutely wonderful! I like to use Hormels "Real Crumbled Bacon" with picnic bacon which has 50% less fat than pan fried bacon and I also use 2% shredded cheese which cuts down on fat and calories. This recipe is a "must try". It's a definite keeper!
