Grilled Fish Tacos with Chipotle-Lime Dressing

4-star rating for the dressing! I followed exactly but used a few drops of hot sauce and a few drops of liquid smoke instead of using adobe/chipotle sauce. We cheated and baked our fish (did not use this marinade recipe), but topped with shredded red cabbage, shredded carrots, black bean and corn salsa, and the dressing! Very tasty!

Peach Crisp III

This is a great way to use fresh peaches! I omitted the granola (increased oats) and pecans, and mixed the spices in with the crumble. I also left the peel on the peaches - more fiber that way, and it's easier!

Fig and Lemon Chicken

This was pretty good! Subs: we used fresh figs from our backyard tree, apple cider vinegar, and chicken breasts. Omitted the parsley, only because I forgot it! The lemons and figs balanced nicely and the chicken was flavorful.

Amy's Cilantro Cream Sauce

This was tasty on shredded pork (leftover from a baked pork tenderloin) tacos with lettuce and monterrey jack cheese. I halved the recipe, but followed it exactly. Since it was January when I made it, the cilantro I bought at the grocery wasn't quite as 'powerful' as the cilantro we grow in our backyard in the summertime. I'll try this again then!

Honey Mustard Grilled Chicken

This makes a very easy and tasty marinade/sauce - probably better as a sauce. I followed the recipe exactly. Didn't notice much of the honey mustard marinade flavor on the grilled chicken by itself, but we didn't baste while grilling. It's very flavorful for dipping though!

Marinated Pork Tenderloin

This was ok, not as sweet/fruity as I was expecting (and I even added another half can of apricot nectar). I didn't have parsley, so I added dried thyme. I also added a touch of horseradish. We have leftovers, so we'll probably shred it and have it in tacos or something.

Awesome and Easy Creamy Corn Casserole

It's so funny - I was going through my recipe box, and I had saved this recipe a long time ago. BUT a friend recently passed the recipe along after we had this dish at her house. Didn't even realize I had the same recipe saved! It's really very tasty, and toddler-approved! I made it for New Year's Day dinner (along with Emeril's Hoppin' John), and our guests really enjoyed it as well - no leftovers!

Easy OREO Truffles

We made these last year. They are SO EASY and SO DELICIOUS! We also melted white chocolate, put it in a ziploc, cut off the corner, and drizzled over the milk or dark chocolate for a professional look.

Chipotle Crusted Pork Tenderloin

This was very good, though I did have to alter the ingredients a little. The recipe gets partial credit, and so does my grill-master husband! ;) I used minced onions instead of onion powder, added 1 tsp. of dried cilantro, but had to get creative for the chipotle component. I used chili powder, cayenne, coarse ground black pepper, and a few dashes of liquid smoke. The pork was tender, spicy, and so flavorful!

I didn't care for these at all. I'm not a huge fan of asparagus, but my husband is. I used the "simple cajun seasoning" from this site, which I found pretty tasteless actually!

Easy Pumpkin Muffins

These were great, and my toddler won't pass up a chance to crumble one into her mouth! :) I used spice cake mix, canned pumpkin, and added 1/3 cup of finely grated carrot for more veggie power. And I made mini-muffins - 15 min. was perfect. Before I baked, I sprinkled a little oatmeal (quick cooking) and brown sugar on top, since they are not the prettiest things to look at. ;) Oh, I put the batter in a ziploc bag and cut a corner off, then used it as a piping bag to fill the muffin cups.

Chris's Incredible Italian Turkey Meatloaf

Pretty tasty! I followed the recipe, but added 1/3 cup of finely grated carrot and one chopped roasted red pepper for color and more veggie content. Also added chopped fresh parsley from our herb garden. My husband even liked it the next day on a sandwich!

Red Skinned Potato Salad

This was really good - I used all the ingredients, but in slightly different amounts. I did use half Duke's mayo and half sour cream (and not nearly 2 cups total). I made it the night before our party and crumbled bacon on it right before serving.

Bourbon Whiskey BBQ Sauce

We really enjoyed this sauce on our crock pot pulled pork! I doubled the recipe and followed it almost to a T, but used less garlic, less worcestershire sauce, omitted hot sauce, and I added molasses! It was sweet and tangy! I put most of the sauce in with the pulled pork, and ran the reserve through a blender so it was smooth to put on the sandwiches later. I bet the sauce would be great on grilled chicken! Thanks for a recipe I will certainly use again!

Cheesy Potato and Corn Chowder

This is really, very good (I'm enjoying some leftovers for lunch right now!). I made a few substitutions: olive oil instead of margarine, skin-on red potatoes (and added more than 3 c.), 1 c. milk + 1 c. half-and-half, added a can of creamed corn, and used shredded cheese at the end. It's quite tasty with a hunk of good bread - and topped with more cheese and some bacon bits!

Parmesan and Basil Chicken Salad

This was very good. I used leftover baked chicken (black pepper and italian seasoning) and added slivered almonds. I chopped the celery and basil and just mixed it together - I didn't use a blender or food processor, and I just eyeballed the amounts. I also used light mayo. It has a great flavor - would probably be good with red onion or roasted red peppers added too!

Pudding Poke Cake

This was quite a tasty cake and a hit when we took it to a dinner party! I was a little nervous about pouring the pudding over the warm cake (and then refrigerating it), but I didn't need to worry! I used a yellow cake, 1 package of vanilla pudding, and frosted with chocolate frosting (melted/softened in the microwave, so it pours smoothly out of the can). It reminded us of Boston Creme Pie. I didn't use a wooden spoon handle because I thought the holes would be too big, but next time I will so the pudding is nice and concentrated!

Chili-Lime Chicken Kabobs

this was very good! i doubled the recipe for 4 boneless chicken breasts and followed exactly except for: i added dried minced onions instead of onion powder and fresh minced garlic instead of garlic powder. the flavors blended really well, and it was quite flavorful! i'm adding it to my marinade collection!

Acorn Squash
