I cannot begin to tell you how well this turned out. As I was making it, I thought, "Well, this can't be enough ingredients to give much flavor." So, I improvised and added some basil, oregano and red chili pepper flakes. I also used the large can of crushed tomatoes. I also added barley simply because I had bought some a year ago but had no idea when/where to use it. Last night gave me the perfect opportunity. Wow! I didn't even need to make the roux because the crushed tomatoes and the barley thickened up the soup nicely. I literally cannot wait until this batch is gone, so that I can make it again with potatoes and macaroni this time!!! I am VERY, VERY picky when it comes to flavor, so thank you, Sandra, for a recipe that will always be a favorite!!!
