This recipe is great as is. I usually replace the oregano with a teaspoon of thyme (I don't like oregano), and add a finely chopped onion or shallot. You need to be a fan of marsala, obviously, and don't overcook the pork.
I pair it with roasted garlic mashed potatoes and onions baked with rosemary from this site.
