Autumn Apple-Squash Crisp

I was the submitter for this recipe under a different(lost) account. We still love it. Sometimes I grate the apples instead of cube them, and I have used dried cranberries instead of raisins. I get lots of requests for this unique way to use squash.

Cranberry Apple Casserole

Now really; this was NOT a side dish! As an extremely easy dessert, it was great. I will keep cranberry sauce and apple pie filling on hand so I can make this quickly when needed. Even as dessert, it's pretty sweet. Great with vanilla ice cream.

Oatmeal Raisin Cookies

I was a little skeptical when I read all the glowing reviews; afterall, how exciting could an oatmeal raisin cookie really be? Well, these ones are oatmeal cookie heaven. What a great recipe. I replaced the shortening with butter, otherwise I followed the recipe exactly. These will be going in my children's lunchboxes on a regular basis. Thanks for the great recipe.

Super-Simple, Super-Spicy Mongolian Beef

The whole family loved this dish. I would recommend using the 1/2 salt soy sauce, it was a bit salty. Also, I added a bag of frozen mixed Chinese vegetables just before it was finished cooking. This one is going on regular rotation.

Orange Raisin Cake

Great tasting cake; I substituted butter for shortening (and decreased it slightly) and added cardamom to the batter and used it for the topping instead of cinnamon. This is a comforting, old-fashioned style cake, not too sweet and great for brunch. I would use a smaller cake pan for a higher cake, and also the ingredient list is missing the sugar that goes in the batter.

Jan's Chocolate Cake

My daughter makes this cake frequently. It is the best chocolate cake we have ever tried; moist, good crumb, not to sweet. These also make wonderful addictive cupcakes. For the person who had trouble icing it, try freezing it first. That is what cake decorators do.

Cajun Roasted Pork Loin

This is an easy recipe that tastes great. I added more garlic, but that is just a personal preference. I will be saving this recipe as a new family favorite.
