Cake Balls
I used a white cake, lemon frosting, and vanilla almond bark. They were delicious, but a little overly sweet. I think if I make them again I might try melted chocolate chips instead of the candy coating.

Amazingly Easy Irish Soda Bread
I had to add about 2 extra tablespoons of buttermilk because the dough was too dry to knead at first. Then I baked the loaf at 350 instead of 375, and it was perfect. The second time I made it I added orange craisins, and mini chocolate chips, and it was even better!

Mini Pumpkin Butterscotch Muffins
These were a cinch to make, and had a beautiful moist texture, but I thought that the spices and butterscotch chips totally overpowered the pumpkin. If they were called "butterscotch muffins" I would've liked them better I think, but I was expecting more pumpkin taste.
