Boudreaux's Zydeco Stomp Gumbo
This will be helpful for Aussies:-) I use Chorizo for the sausage, Aussie beer (coopers), and I made up my own cajun spice. Because I'm also gluten intolerant I use White Wings Gluten free Plain Flour and It works just as well as normal flour:) We like to add some okra as well.

Braised Lamb Shanks
This is a great recipe! A little brown sugar will also cut down the sourness. I found that this worked really well in a crock pot as well as the oven. I've also used diced leeks and zucchini on the bottom layer.
