Pumpkin Chocolate Chip Cookies III

Reviewed: Oct. 10, 2006
These hit the spot! I did do a couple of things slightly different. I only did about 1 3/4 teaspoon of cinnamon and 1/4 teaspoon of pumpkin pie spice. I also forgot to mix the baking soda in the milk before adding it. I don't think it really changed anything. I didn't add nuts, either, since my kids don't really like them. These were such a perfect fall treat!

So yummy! I, too, had only canned pineapple and that was fine! My friend had four of these, she loved them so much!! Thanks for the recipe!

Key Lime Cookies I

Reviewed: Jun. 4, 2006
These were just what I was looking for! The dough was sticky but I did as the last reviewer suggested and dropped the dough onto a plate of powdered sugar and then it was very easy to roll. I also upped the amout of lime zest to 2teaspoons. I think that helped a lot. We really loved these!

Grilled Cilantro Salmon

Reviewed: May 31, 2006
It was pretty good. I did think that the flavor of the marinade was fairly mild considering the ingredients used. It was fine but not my favorite.

Gourmet Mushroom Risotto

Reviewed: May 31, 2006
This was great, even with the changes I made because I didn't have all the ingredients. First, as per other reviewers, I only used about half of the mushrooms call for. Then, because I didn't have any shallots, I used half a white onion. I didn't have the Arborio rice, either, so I used just regular white rice. I skipped the white wine because I didn't have any. I added 1 Tablespoon of Sesame Seed Oil for flavor to the onion and rice mixture. I had leftover salmon from the night before that I heated up with a little butter and lemon juice that I then added. I completely forgot the Parmesan but I'm sure that would have made it even better!! It was fabulous. My kids even wanted seconds!!

Potato Salmon Patties

Reviewed: May 30, 2006
I really didn't like these. I have never had canned salmon before and was expecting it to taste more like fresh salmon. I'm giving it a three star because my kids ate them. I did, however, try the cilantro lime tartar sauce from this site and that was very good. Sorry.

Broccoli and Ramen Noodle Salad

Reviewed: May 29, 2006
I had this at a friends birthday party and knew I could find the recipe on this site! It is so good. It is a lot like the chinese chicken salad but even better. The only thing I do differently is to cut the number of green onions down to about 2 or 3. It is my favorite summer bbq salad!

Zuppa Toscana

Reviewed: May 29, 2006
I was happy to find this recipe on this site because I love this soup! I did change a few thing to my taste. I sliced 5 potatoes instead of two, used 8 cubes of chicken bouillon instead of the soup base and used 2 quarts of water instead of one. I also browned the bacon separately and only used three slices. Thanks so much for posting this recipe!!

Artichoke Chicken

Although this is very fatty, we love it. I have made this a couple of times and have found that the cook time for us is more like 50 minutes. Maybe it is just our oven. Great recipe, though!

Elegant Wild Rice Soup

Reviewed: Apr. 25, 2006
We loved this!! The first time I made this, I made it as directed and it was great but I thought it was just a little too rich and thick. So the next time, I made a few changes. I cooked up a box of long grain and wild rice mix from the store. I added the whole thing (about 2 1/2c.) to the soup. I also decreased the flour to 1/3c., so it wasn't so thick. I also used skim milk instead of the half and half. It turned out great! MY husband usually doesn't give anything a five star but this he said definitely was!

Peanut Butter Popcorn

Reviewed: Apr. 12, 2006
This is a great little treat!! I had some corn cereal I needed to use so I substitued about 9 cups of that cereal for the popcorn. I also used butter instead of margarine. I thought it turned out very tasty but with this sauce, I'm sure anything you add to it would be great!!

These are very good! This recipe won an appetizer contest we had with our friends! I use Grand's flakes biscuits (I think that's what they are called) and separate each into four parts.
