I'm a stay at home mama, of three, who is always in the kitchen by neccesity, but I love feeding people, and watching them enjoy it!
My favorite things to cook
My favorite things to cook tend to be whole grains and whole foods. I love looking into the fridge and figuring out what to put together to make a fresh and healthy meal for my family. I cook a lot of old fashioned meat based meals for my husband, but my favorites are usually the lunches I pull together for myself and the kids during the week. That being said I am a sucker for a good dessert!! : ) My newest cooking obsession is canning. I made 6 different jellies for Christmas gifts and I just got a pressure canner(for Christmas) so that I will be able to can some of the stocks, beans, and soups that I make on a weekly basis. I'm hoping to have a little stockpile of healthful and savory meals for the days that get too busy! We ALL have those days! : ) And seeing that I have a very small freezer, my hubby will appreciate the fact that half of it isn't taken up with my stocks anymore!
My cooking triumphs
I make a darn good lasagna, both meat and veggie. I make great whole grain salads on the fly. And I make a pretty good apple banana muffin. I recently have become the queen of sweet breads. I fill them full of whole grains and veggies, so I don't feel bad about the kids eating them...and full of fiber so my husband gets a little more into his less than ideal meatatarian diet! : )
My cooking tragedies
The first few times I cooked quinoa were unqualified disasters!! I recntly made a broccoli soup that I actually had to throw away...and if you knew me you'd know that HAD to be bad because I am super thrifty and never waste food... but for some reason it was just disgusting... I don't know if the broccoli was super bitter or what, but no one would eat it... I couldn't even force myself down the drain it went!

Citrus Swordfish With Citrus Salsa
I thought this was great and my kids loved the salsa! I didn't add the sugar though, I didn't feel like it needed it with the fruit being so sweet. I wasn't able to grill, but baked it on a rack (over a pan to catch drips) in the oven. It came out perfect and was delicious!

YUMMY! This was way better than I was thinking it would be, because of some of the reviews. I used a chuck roast because that's what I had. I think that people who thought it was tough might not have cooked it long enough... not too long. I ended up cooking mine for longer than stated, but that is because my hubby likes his meat very tender. I think it was a little over two hours. the flavor was awesome. I sauteed mushrooms on the side for the ones who like them and the flavor was still great. I used a wine that was pretty tasty to drink, & I think that makes a difference. I did add two cloves of garlic(pressed) at the end with the onions. I resisted the urge to add the onions in the beginning, and am glad that I did. I didn't measure my flour(or salt and pepper I added to season it) or oil... floured the meat before browning, and did a few different batches of meat to get each one totally browned. The sauce turned out a nice consistancy to cover egg noodles and stick to the meat. It was truly fantastic. Thank you for this recipe! My kids and hubby gobbled it up! : )

Pumpkin Pecan Pancakes
mmmmm.. soo good! These are super filling and stick with you for awhile, but so very tasty! The first day I made them I put a little pumpkin pie spice in some sugar and sprinkled them with it... and the next day when I used the rest I put some fresh whipped cream over the top and we had them for dessert!! : ) I added some ground flax seeds in place of 1/2 cup ww flour but otherwise followed the recipe. Thanks it was exactly what I wanted them to be! : )
