Sopapilla Cheesecake

Reviewed: May 9, 2010
My spousal unit allowed as how he might like it, but he'd have to have another taste, just to be sure. Four times. If I were to chance anything, I'd maybe fold some blueberries into the cheese mixture, or spread some preserves (strawberry, blackberry?) on top of the cheese mixture before putting the top crust on.

Creamy Bratwurst Stew

Reviewed: Dec. 9, 2009
This was very easy to make. I didn't put in the green peppers, because neither my husband nor I really like them. I used whole milk instead of half-n-half because that's what I had in the house. My husband looked at the recipe and said, "This sounds kinda wierd." and then ate two bowls of it AND raved about it to his mother. Gotta love that! I also found that this was very easy to halve (without using the modifier on the site), which I did because there are only the two of us and I really didn't want eight servings AND I didn't have enough bratwurst. Thanks for sharing this. It is now in my "Stuff We Like" cookbook.

Mom's Zucchini Bread

Reviewed: Aug. 5, 2007
My version of this recipe includes one small can of pineapple tidbits, well drained, and about 4 ounces of maraschino cherries, halved and well drained. Add with the nuts. It is just the best zucchini bread recipe I've ever come across.

Fantasy Pie

Reviewed: Jun. 4, 2007
I took this pie to a graduation party. There was none left about halfway through the night. The only changes I made were these: I soaked my raisins in bourbon (because they were kind of old) and drained them before adding them to the pie. I used mostly light corn syrup and a little molasses, because that's what I had on hand. And I only cooked this for 50 minutes -- that's all it needed.

Pineapple Cheesecake

Reviewed: Apr. 18, 2007
This is great. I've added a bit of coconut with the pineapple, for a Pina Colada flavor. I've used the strawberry Cool-Whip for yet another flavor. If lady fingers are hard to find, thinly sliced pound cake works well. If one wants a larger dessert, add half again as much of everything (3 bars of cheese, more pineapple, more topping) and this makes a 9x12 pan full.
