Enchiladas

These were very, very rich and yummy. I didn't have jalapenos so I used mild green chilis. Next time I will use jalapenos because the spice would have complimented the creaminess better. My husband hates cream of chicken, but loved the creamy sauce.

Oven Scrambled Eggs

Yum! These were delicious and easy. I used some garlic salt instad of normal salt to give them more flavor. Mine stuck to the pan a little, so next time I will grease the pan better.

Slow Cooker Chicken and Dumplings

Yum! This was easy and delicious. I substituted chicken broth for water and only used one can of biscuits. One can is DEFINITELY enough. I put everything in the slow cooker before work, left it on low all day, then turned it up to high for an hour after adding the biscuit dough. My husband is not a fan of chicken, but he loved this. I used Campbell's Cream of Chicken with Herbs.

Vegetable Cheese Soup I

I doubled the vegetables and it was still soupier than I would have liked. I prefer my soups thicker. I think next time I'll add triple the potatoes and carrots and throw in a can of whole corn, too. It's a good base recipe, though.

Summer Bean Salad II

Yum! I used a red onion because that was what I had on hand and boy, did it make the salad look pretty. It does taste better the second day, but I couldn't stop eating it after I mixed in the lime juice.

Satiny Chocolate Glaze

I used the exact ingredients, but microwaved them. The first time I did 45 seconds, stir, 45 seconds, stir, like one reviewer said. The batter was lumpy and smelled a little burnt. I tossed that and the next time I chopped up the butter a little bit and did 15 seconds, stir, 15 seconds, stir, and then another 15 just to be on the safe side. The glaze was smooth and silky. I used it on cupcakes. All I did was dip the cupcake and lift it out. They were oh so smooth and shiny. Beautiful! Much easier than smearing thick frosting all over 24 cupcakes.

Black Bean and Couscous Salad

I doubled the sauce recipe and used one can of beans. It was delicious and made for great leftovers for lunch. This is a great cool salad for summer.

Snickerdoodles III

I followed the recipe except for using cream of tartar which I didn't have, but my cookies didn't spread at all. I wonder if I mixed the batter too much or if the cream of tartar makes that much of a difference? They were still yummy, but they weren't nice and pretty like the ones in the pictures.

Pasta Hot! Hot! Hot!

The parmesan overpowered the crushed red paper and it just became dry and bland. I think the measurements are off. This might work with less spaghetti, but as is it doesn't.

Quick and Easy Brownies

I followed the recipe exactly. These were a little sweeter than I care for, but good. I prefer my brownies to taste more like chocolate and less like sugar. They make cakey brownies, so be sure to have icing on hand and don't bother making these if you want fudgey brownies.

Slow Cooker Pulled Pork

I made this for a party and everyone raved about it. I used good root beer (Jones) made with pure cane sugar and a bottle of Sweet Baby Ray's Chipotle bbq sauce. It was sweet with a subtle kick that wasn't too spicy. This is definitely a keeper!

Banana Oat Muffins

My main complaint is that they stuck to the paper baking cups. Definitely spray your paper cups before making this recipe. These were not too sweet and tasted strongly of banana. I followed the recipe, except I added some chopped dates and Craisins. I personally thought they were a little bland even with the dates and Craisins.

Good Old Fashioned Pancakes
