Fajita Seasoning

Love this combination. My family doesn't like spicy so I leave the cayenne and chili powder out. Still an amazing mixture!

Sugar Cookie Icing

Best sugar cookie recipe I have ever find. I was a bit concerned after I mixed things up and it was pretty thick. The reviews saved me: add more milk. Not a lot, but maybe another 1/2 - 1 teaspoon. This recipe makes for a VERY pretty cookie. Thanks!

Grandma's Chicken Noodle Soup

This was a very good recipe. I did make a few changes according to some of the comments and for what I had on hand. I used powdered instant chicken boullion (I shudder to think of the sodium content), added some shredded some carrots and left out the salt. I left the rest of the recipe the same. My kids loved it.

Kid-Approved Sweet and Sour Chicken Sauce

I was very skeptical of this recipe. I followed the notes to switch leave out the vinegar and substitute lemon-lime soda for the pineapple. This came out very well. I added a bit of soy sauce, brown sugar and a touch of barbeque sauce. My kids loved it and it is way better than any of the bottled stuff in the grocery store. The novelty of ketchup and soda mixed together helped too I think. I will use it again when I need a sweet and sour sauce.

Iced Pumpkin Cookies

Used 1.5 cups fresh pumpkin and skipped the cloves since I didn't have them. Very good flavor, consistency and softness. Keeping this recipe!

To Die For Blueberry Muffins

We used fresh blueberries for these muffins. The flavor is good, but the batter is STICKY! Not just a little sticky, but really bad especially trying to get in muffins. I used muffin papers so I can't even imagine what it would have been like to get them out of the pan!

Sophie's Zucchini Bread

I experimented with the recipe the 1st time substituting apple sauce for the oil (big oops!) and it came out a big gooey mess after 1.5 hours of baking. The 2nd time I followed the recipe to a T but set my oven at 375 degrees. After an hour it seemed done but after cutting into I realized it still wasn't completely done. I knew it would be dense but it hadn't even fluffed up a tiny bit. The flavor is okay, but the consistency and quirky baking times is a no-go for me.

Mexican Lasagna

I needed a vegan recipe for some friends we had over. I replaced the hamburger with black beans and a huge can of refried beans and left out the sour cream and cheese and just topped it with black olives. Surprisingly it came out well. I'll probably make it again with the bean substititution but with the cheese and sour cream.

Vegan Chocolate Cake

I have to admit I didn't have high hopes for this recipe. I followed but per other reviewers I doubled the cocoa powder and used 2 teaspoons balsamic vinegar instead of distilled white vinegar and I accidentally left out the salt. The recipe made 15 very pretty cupcakes. The tops are very smooth and round. I planning on just scooping out a tiny bit out of the middle and putting in some homemade raspberry jam instead of frosting to save time. I probably will make this again.

Almond Biscotti

Followed the recipe exactly, but the dough was incredibly wet so I added about another cup of flour. Poured it on the aluminum foil and didn't even try to shape it. I finished it off according to the directions and it came out looking like it should. I'm used to biscotti being very dry and this came out slightly chewy still. I might try increasing the final baking time by 5-10 minutes per side.

Chewy Cocoa Brownies

I was in the mood for brownies tonight and only had cocoa powder (no chocolate squares/chips/etc) and came across this recipe. Threw it together *really* fast and only omitted the nuts and powdered sugar. I think I used a bit more flour than called for because the batter seemed really wet. These are thinner than boxed brownies so either prepare for thin brownies or use a smaller pan.

Enchilada Sauce

Very good! Wanted something to go with mexican eggrolls (rice, black beans, corn, and cilantro) and this looked promising. Made according to the recipe except left the chili powder out since we're not fans. Went perfectly as a dipping sauce. Will definitely make again and even use as an enchilada sauce for actual enchiladas :)

Meatball Nirvana

Followed some suggestions and substituted an egg for some of the milk and since I'm a complete wuss on hot sauce, I left out the pepper flakes and hot pepper sauce. Whole family LOVED them! Great base recipe.

Lemon Yogurt Muffins

I accidentally left the lemon peel out of my first batch. Out came the fluffiest cake like muffins I ever had. The 2nd batch was made according to the recipe and the muffin part had an underwhelming lemon flavor and the topping was overpowering lemon flavor. Will definitely keep the recipe for the muffin part of the recipe but leave the lemon out.

Creamy Macaroni and Cheese

The only change I made the first time was I left the Dijon mustard since I don't like it. The second time I made it was just the sauce to put on nachos. I think I'll add some green chile's next time. This time I mixed some salsa into it. I used the leftover sauce the next time over broccoli. LOVE this sauce.

Salsafied Chicken and Rice

I had tossed some rice in my steamer and wanted something to go with it and came across this recipe. After reading the reviews I seasoned the chicken with salt, pepper and cumin and when it was done added Salsa, a can of corn and a can of black beans. We made burritos with it and it was very good! Will make again.

Quick Quiche

Great, easy recipe! I used cheddar since I didn't have swiss and added spinach. I layered the bacon and cheese before I poured the mixture in and the bacon and cheese moved to the edges. Next time I'm going to mix everything, then pour in the pan. Definitely going to make again!

Homesteader Cornbread

My husband made this at my recommendation. The flavor was passable but it was a bit gummy in the middle and not very fluffy. Need to read other reviews to figure out what makes it "perk" up.
