Chocolate Ganache

Absolutely incredible!!! Made as instructed and it is THE chocolate topping/frosting/icing recipe to go to. Perfect pared with a not-so-sweet chocolate cake like Dark Chocolate Cake II on this site. CAUTION: have glass of cold milk on hand with this one :)

Spicy-Sweet Glazed Salmon

One small change: baked slightly covered at 350°F for 20 minutes, then uncovered for an additional 10 min. (too afraid to broil fish). Turned out PERFECTand is a definite keeper for my family!

Chocolate Truffle Cookies

Wonderfully RICH!!! True chocaholics will adore these with a nice cold glass of milk!!!!! Used 1/2 cup of dark chocolate chips and 1/2 cup semisweet chocolate chips when melting as my family loves the taste of dark chocolate chips most. When following the directions, the cookies came out dense, rich and very chocolately!! A keeper!!

Beignets

Great sleepover snacks AND for breakfast the next day!! Added 1/2 tsp vanilla as suggested in previous reviews. Tossed them in a cinnamon/sugar mixture in a brown paper bag and VOILA!! My kids L-O-V-E these and ask for them often. Good to know you don't have to use the whole batch but can save it in the fridge for another day.

Black Bean and Salsa Soup

Wonderfully yummy!! As suggested by previous reviews, I used low-sodium black beans to eliminate too much sodium. I used pico de gallo instead of salsa. This is very, VERY easy to make and the taste is absolutely delicious ... better than any restaurant black bean soup I've tried. We skipped the green onions as we were very hungry, but I'm sure that will just make it look pretty. A definitely go-to recipe for cold days/nites.

Mexican Casserole

Did NOT change a thing and it turned out terrific! Hadn't used Ranch-style beans before but I think that's what gave this dish it's unique flavor. 4 cups of shredded cheese sounded like too much and instead put just enough to cover the meat mixture. Family L-O-V-E-D this dish and will definitely make this again!!

Swedish Cream Wafers

Excellent! Takes time BUT well worth!!! Followed recipe exactly with no substitutions. (The egg yolk is not going to hurt you.) Make sure to double the filling. My children make this with me during the holidays and it is now a family tradition!

Penne, Tomato, and Mozzarella Salad

Made as specified, it was bland. Added 1/2 cup balsamic vinaigrette and it was much better. Like one reviewer, salad to me, should be cold ... the tastes melded much more after the salad sat a bit in the fridge.

Flourless Chocolate Cake II

WOW!!! Family loved this and didn't even know it was gluten free! Followed suggestions of MommyFromSeattle and will definitely label this as THE chocolate cake to make when asked to make chocolate cake. I used Ghiradelli 60% cacao bittersweet chocolate chips instead of cocoa powder. Topped with hard chocolate glaze recipe. Very elegant looking and the glaze firmed up nicely.

Pumpkin Bread

Didn't change any ingredients. Only changed total baking time to 80 minutes as it did over-bake the bread a bit. A definite go-to recipe for pumpkin bread anytime during the year but ESPECIALLY during the fall.

Slow Cooker Turkey Breast

Great aroma while cooking AND great tasting!! Additions I made: (1) melted butter to add to the soup mix then rubbed into the turkey, and (2) added half can of beer since I always crock-pot meats with some liquid. This made just the right amount of liquid to thicken into a gravy before serving.

Vegan Brownies

Was a hit at our party (both for dairy-free and non-vegan eaters)! Followed other suggestions: increased the cocoa powder by 1/4 cup; substituted the 1 cup water with 1/2 cup strong coffee and 3/4 cup water; substituted the 1 cup oil with 1/4 cup oil and 1/2 cup unsweetened applesauce; AND added vegan chocolate chips (about 1 cup). I baked the brownies for a total of 45 min after first checking at 30 min and increasing the time by 3-5 min until toothpick inserted in the middle came out clean. Did NOT come out oily. No one could tell they were any different than regular boxed brownies! Will make again since I have another bag of vegan choc. chips.
